Melbourne really has the most random weather. It goes from 17 degrees to suddenly 30 degrees! Chuck in some rain here and there and mighty winds and its nothing obscure. I must admit, I’m embracing the extra sunlight- Especially seeing as one of my goals for this month was to work on my photography- Seriously, natural sunlight does wonders! Its the best stepping stone for turning ‘extremely crap’ photos into the ‘crap’ category. Here’s to moving up to ‘Sub par’ by next month. 😉
Sticking to the traditional route- here are my eats from Tuesday which was the first day study free! Thank you, Jen for hosting- stop by and give your eyes a workout!
Breakfast- 2% Chobani Greek yogurt mixed with flaxmeal, shredded coconut, kamut cereal and topped with coconut butter. I LOVE putting melted coconut butter in cold things as it freezes over instantly- ah the little things that amuse me.
Lunch part 1- Brussels sprouts were discounted at the supermarket so I bought the whole kilogram bag! Roasted brussels sprouts in garlic infused olive oil (So good!) fake crab meat and cheddar cheese cubes.
Lunch part 2- I was craving an English muffin but didn’t have any- microwave version to the rescue! This recipe with one half spread with vegemite and one side spread with almond butter.
Snack- No bake SunButter cookies– Let me know if you want the recipe, its a doozy!
Dinner- Roasted butternut squash, roasted cauliflower and stir fried chicken thighs. Simple. Tasty.
Pre bed- A Quest bar with a mug of sleepy time herbal tea. It didn’t live up to its name. False advertising.
So that rounds out a full day of eats! Now that Summer is truly near, I can foresee more colourful, salad packed meals and fresh fruits! The best thing about Summer is the relatively better prices of all the good fruits- berries, melons and passionfruit!
