Friends, it feels like it’s been a while since I’ve done a full What I Ate Wednesday post- The last time, Niki showcased how she cheated on the paleo diet…but that wasn’t my eats so she can go prance around with a caveman.
Anyway, this a full day of eats from Sunday two weeks ago. Big props to stunner Jenn for hosting-
Breakfast- The oatmeal experimentation has been going strong- This one is so damn close to perfection. Black Forest Oatmeal Pudding– the texture….no words. Keep your eyes peeled.
Lunch- Knowing full well that I had intentions of heading to Melbourne, I had to eat anything pre made before then. Lunch was three of my curry vegetable burgers with a side of kettle corn baked potatoes. I swear in total, there was probably 4-5 large potatoes in this lunch. Can we hashtag potato pride?
Snack- I mentioned in this post that to make these single serving breakfast cookies took three attempts. This was attempt number two…I think. No food ever goes to waste. (Except that one time I put cayenne pepper instead of cinnamon in a cinnamon roll recipe. Let’s not mention that again).
Dinner- A final portion of Persian saffron chicken, the remaining few kettle corn baked potatoes refried with red pepper flakes because I wanted them hot and some broccoli with parmesan cheese. I can’t believe I’m about to admit it but I probably enjoyed the broccoli the most.
Pre bed snack- This. Oh man, I can’t wait to share this recipe. It’s been a long time coming.
