Having dried apricots as their main ingredient, these lovely treats can be made and enjoyed year-round.

  • It’s only 3 ingredients. And still, this recipe manages to turn plain dried apricots into something truly scrumptious. 
  • Takes minutes to whip up. So long as you have a high-speed blender, it will take you less than 5 minutes to make this sweet delight. 
  • You can use any sweetener you like. These apricot treats can be sweetened with white sugar, sugar-free sweeteners, syrups, and even dates. You can make these bites as sweet as you like. 

If you have a bag of dried apricots sitting in your pantry and you don’t know what to do with them, this is the perfect recipe for you to try. It will make dried apricots a staple on your shopping list. 

Ingredients needed

You need only three ingredients to make this delectable treat.  

  • Dried apricots. Check the packaging to make sure the apricots are sugar-free. 
  • Shredded coconut. Use unsweetened shredded coconut. 
  • Sugar. I use white sugar to make these bites. A sticky sweetener like honey will work too.

If you are looking to reduce your carb intake, swap the white sugar with a granulated sugar-free substitute of your choice. 

How to make apricot delight

  1. Blend all ingredients together. Add the dried apricots, sugar, and shredded coconut to a high-speed blender. Blend until a thick dough-like mixture remains. 
  2. Shape the bites and let them set. Form even-size bites. Roll them in finely shredded coconut or sugar. Place the apricot bites on a plate lined with parchment paper and refrigerate for 30 minutes or until they have firmed up.

Tips to make the best recipe

  • If you don’t have time to shape small bites from the apricot mixture, simply add it to a pan lined with parchment paper. Even out the mixture and press it into the pan. Sprinkle with shredded coconut and refrigerate until firm. Once set, cut into squares and enjoy. 
  • To change up the texture of these bites, add finely chopped dried apricots to the apricot mixture once you have blended it. 
  • Skip the sugar and add pitted dates to the apricot mixture to sweeten it. The dates will sweeten the bites while adding hints of caramel flavor to them. 
  • Mix in some dried mango to create a richer fruity flavor. 
  • Add chia seeds and sunflower seeds to the mixture for a nutritional boost. Soak the chia seeds in advance. 

Storage instructions 

To store. Keep these bites in an airtight container or bag. You can store them at room temperature or in the fridge for up to 2 weeks. 

To freeze. These apricot treats freeze beautifully. Freeze them in an airtight container for up to 2 months. Put sheets of parchment paper in between the layers to prevent the bites from sticking to each other. Let them soften at room temperature before serving.

The water content of fresh apricots is quite high. They will not work well for this recipe. 

How healthy is apricot delight?

So long as you don’t use excessive amounts of refined sugar to sweeten these bites, they are quite healthy.

  • In a high-speed blender or food processor, add your dried apricots and shredded coconut and blend until a dough is formed.
  • Using your hands, either form into balls or press into a loaf pan and press into place. 
  • Slice the apricot delight into pieces and roll them around in sugar.

    Made these earlier today. My mom is on gaps diet and was looking for something that would satisfy her sweet tooth. These are sooooo good. I had a few before I gave them to her. Simple to make, you cannot get more wholefood than this. Pure, fresh, nutritious and inexpensive to make. Perfectly balanced with sweetness; just enough. Texture is great; not falling apart. Your recipes are THE best!

  3. Where did you find the (bright orange) dried apricots? The ones that I’m seeing that are 100% unsweetened (and with only one ingredient) are always brown in color.

  4. I loved dried apricots so these sound great. Reading this I realized I have never had a fresh apricot. Must remedy soon.

  5. This would be a new snack for me. They look delicious, and using dried mango’s would be another option to try.

  6. I have never tried Apricot Delights as a child! They do look delicious, but because I didn’t like apricots when I was younger, maybe I wouldn’t have liked them then! I think that this healthier rendition would taste amazing, though!
