Why this recipe works

  • Quick and easy. Why spend time and money getting a cookie delivered when you can make one at home in under 5 minutes? And trust me, you’ll have all the ingredients at home.
  • Kid friendly. Want to get your kids excited about cooking? How about making this cookie with them? Without the fuss of baking and complicated appliances, this recipe is a safe starting point.
  • They are so versatile. There’s no wrong time to enjoy these chunky, chewy, chocolaty treats! Fancy a quick snack, a fun dessert, or something to snack on with a movie? This ticks the boxes.

Ingredients Needed

What I love the most about this recipe is that you can make it with just pantry staples and chocolate! Here’s what you’ll need.

  • Butter. Any unsalted softened butter will work for this recipe. But if you use salted butter, skip adding the additional salt.
  • Brown sugar. Its molasses flavor adds a layer of complexity to the cookie. Also, brown sugar helps achieve the perfect moist and chewy texture.
  • Sugar. I love combining white and brown sugar for a moreish cookie texture.
  • Baking powder. To get a lovely rise.
  • Salt. To enhance the flavor profile and balance the sweetness.
  • Vanilla extract. You’ll need just a splash to mimic the classic chocolate chip cookie taste.
  • All-purpose flour. The base for your instant cookie dough.
  • Chocolate chips. I like using semi-sweet chocolate chips. If you have only a bar of milk, dark, or semi-sweet chocolate at home, make this cookie with it.

If only every recipe were as easy as this one! Here’s how to make an instant deep dish cookie at home.

Step 1- Make the dough. Mix butter, sugars, vanilla extract, baking powder, and salt in a bowl. Stir in flour and chocolate chips to make the dough.

Step 2- Microwave and enjoy! Transfer the dough to a microwave-safe bowl and heat it for a minute at high power. Allow it to set for about 20 seconds, and enjoy!

Flavor and recipe variations

  • Add fruits and nuts. Dried fruits like raisins or goji berries and nuts like walnuts, pecans, and roasted almonds taste incredible in these cookies.
  • Make a double chocolate cookie. There’s no such thing as too much chocolate. Combine with a spoonful of cocoa powder to make a double chocolate chip cookie.
  • Scale it up. Did you know you could make a deep dish cookie in a skillet? Bake a pie-like cookie in the oven for 15-20 minutes for a gooey dessert!

To make it in the oven, transfer the cookie dough to a ramekin or a compact dish and bake for 8-10 minutes at 180°C/350°F.

The USP of this cookie is its last-minute no prep! But you can make the dough ahead of time and refrigerate it until baking.

My favorite way to enjoy this cookie is with vanilla ice cream. You can also serve it with berries, whipped cream, and a generous chocolate or caramel sauce drizzle.

  1. This looks AMAZING! OMG! I have to try this ASAP 😀 I wonder if any other flour works too? The almond meal flour probably adds a really nice nutty texture and flavor though!

  2. This looks incredible! I’ve been spending the past week going through all of your healthy desert recipes, and as I’m allergic to nuts have finally tried sunbutter as an alternative to nut butter and found that it works great! That said, can I sub the almond meal in this for regular white or wheat flour?

  3. This recipe is ridiculous….So ridiculously tasty! Thanks for sharing. I made a double batch for me and my husband, and we both have happy tummies right now ?

  4. I had saved this on facebook awhile ago, but finally tried it today. SO good! Easy and very yummy, I will definitely keep this recipe and make again. I hope you don’t mind, I shared the link back to this recipe on my healthy cooking facebook page.
