“Oh, I LOVE these kinds of appetizers”- They were mini…hot dogs, pies, and sandwiches.
“Oh, I LOVE these kinds of M & M candy!”- They were mini.
Lovely statements made by my sister.
I, however, have different sentiments.
Some foods are more visually appealing and are (arguably) tastier in mini form.
I could totally see the visual appeal of all of the above and to some extent, agree- I personally enjoy mini cupcakes and macarons to their standard sized counterparts. You can enjoy more variety AND not be hit with an instantaneous sugar rush. The savory stuff? I’d prefer that in their normal proportions as their mini ones are seriously lacking in the fillings department (or I MAY just be bitter after my sour ‘high tea’ experience where I couldn’t find the cucumbers in the cucumber sandwiches), and give a new name to ‘two bite’. M & Ms get a free pass, purely because I swear they were designed to eat by the fistful.
What does NOT get a free pass in the ‘mini’ department?
Peanut Butter Cups.
Ohhhhhh peanut butter cups.
Have any of you ever had the mini peanut butter cups? They should just be called chocolate chips, because finding ANY peanut butter in those centers is like finding Kim Kardashian out of the press- Impossible.
I remember buying a large package of mini peanut butter cups for a flight from New York to Los Angeles. I thought I’d be smart and get some snacks from Target, instead of forking out for overpriced options at the airport. I was clearly the sucker here, as those tourist designated pound sized peanut butter cups (which sold for around $15 a pop) would have been more suitable. In fact, it would have been the worth the extra money!
Anyway, ever since then, I’ve given the stink eye to mini peanut butter cups (and mini anything) and given precedence to the pound packaged ones (I may or may not have ordered four on Amazon….). I will settle for the standard sized ones, but those? Both eaten at once! So with today’s recipe, there will nothing mini about it. We’re going to throw (faux) shade at the mini peanut butter cups by making a Giant version, in a healthy breakfast cookie form.
These healthy no bake GIANT Peanut Butter Breakfast Cookies are thick, chewy and satisfying, boasting a myriad of nutritional benefits, yet tasting like dessert! Unlike traditional peanut butter cup inspired recipes, this version contains no palm oil, granulated sugar, butter or other unpronounceable ingredients, but you’d never be able to tell! They can be prepped in advance and are the perfect grab and go breakfast to enjoy! They are deceptively filling too- Packed with protein, fiber, healthy fats and slow releasing carbohydrates, you’ll have the energy to scoff at the mini peanut butter cups.
Just kidding, we’ll be eating those along the way. 😀
Anyway, these beauties literally take no time to whip up and have the best texture. I used a mix of coconut flour and almond flour, but if you don’t have either of those on hand, you can totally sub it for all oat flour– Although this will no longer be grain free! I added a scoop of protein powder (this casein protein powder, this vegan protein powder, and this paleo protein powder are my favorites) for added staying power, but that is optional- If you want to omit, simply reduce the milk of choice. Depending on the ingredients used, these breakfast cookies are naturally gluten free, vegan, dairy free, refined sugar free and grain free!
HACK! Depending on what dietary lifestyle you follow, there are a few peanut butter chip options out there- My favorite store bought kind is this one, which has a genuine peanut butter taste. However, as it’s only suitable for those following a gluten-free lifestyle, I’ve tried making my own before, using this recipe– It works well for this recipe, as it doesn’t need to be baked AND it’s suitable for me vegan, dairy free and sugar free friends out there (if you use a monk fruit-based powdered sugar, like erythritol).
Also, just because they have ‘breakfast’ in their title does NOT mean they discriminate- Snack, healthy dessert or even sweet lunch- It is perfectly acceptable.
Make these healthy no bake GIANT Peanut Butter Breakfast Cookies and while some things are better in mini form, peanut butter cups are not.
They are merely deformed chocolate chips.
- 1 3/4 cups almond flour (can sub for gluten free oat flour)
- 1/4 cup coconut flour
- 2 T cocoa powder
- 2 T Granulated sweetener of choice*
- 1 scoop chocolate protein powder (See above for recommendations)
- pinch sea salt
- 1/2 cup smooth peanut butter
- 1/4 cup brown rice syrup (can sub for maple syrup or agave)**
- 1 T + milk of choice***
- Chocolate chips
- Peanut Butter chips
- Line a large plate with grease proof paper and set aside.
- In a large mixing bowl, combine your flours, cocoa powder, sweetener of choice, protein powder and sea salt and mix well. Set aside.
- In a microwave safe bowl or stove top, melt your peanut butter with brown rice syrup. Pour into the dry mixture and mix until fully incorporated- Mixture should be crumbly. Using a tablespoon, add milk of choice until a very thick batter is formed. If too thin, add a dash more flour.
- Using your hands, form into 4 large balls. Transfer balls to lined plate and press into a large cookie shape. Top with chocolate chips and peanut butter chips and place in the fridge or freezer to firm up.
- * I used a stevia blend
- ** If you use maple or agave, you'll need to add an extra tablespoon of syrup, as brown rice syrup is extremely sticky.
- *** Depending on the protein powder and flour blend, you'll most likely need more. Adjust accordingly.
