Adele ate me for breakfast, hence the lack of coffee chats lately.
Just kidding, but it’s been FOREVER since we’ve caught up. I’m thankful for having a slew of recipes in my archives and of course, my amazing monthly contributors. Without a combination of these two, I’d like to not think about what the happenings of the blog would be….
Let’s talk the cookbook for a hot minute. I submitted my completed manuscript and saying it was an exciting relief would be an understatement. Over the past few months, I’ve been a little absent from the blog, amongst my friends, and even my mom’s cooking, in favor of focusing on the book.
I thought the recipe testing/photo shoots would be the hard part, as evidenced by the three-hour vacuuming session I endured after the final recipe was shot.
The writing part was the hard part- Not so much the recipes, but the little details and the ACKNOWLEDGEMENTS section! I was seriously tempted to thank coconut flour, almond butter and rolled oats there, but refrained.
I’ll continue to keep you guys updated but…it kind of seems surreal! Also, expect some extra fun news…

These flourless pumpkin breakfast brownies– For all of you who’ve made the original version, this one takes it up a notch. The pumpkin makes it fudgier, and the simple ganache on top takes it from epic to EPIC.
I know it’s a little bit early, but gingerbread needed to make a slight appearance! This gingerbread mug cake isn’t overpowering with molasses and has something special- An icing which is acceptable to eat on toast.
I know because I ate it that way.

This weekend I….
…put on my DIY hat.
My sister messaged me during the week wanting to go to Costco…to buy a saw. A SAW.
Before you think my sister was auditioning for a horror movie, she had intentions to make her own chest of drawers to be placed at the end of her bed. On Sunday, she roped me in (with the promise of an extra large latte) to accompany her there. After picking up the saw, we also swung by Ikea to get a display unit, which I thought was to be used for vases or mementos.
We spent the afternoon assembling it together (can someone please enlighten me as to why Ikea claims their products are easy to put together? This silly display unit took 2 hours). After it was done, my sister started filling it in.
….with athletic design shoes.
I don’t understand her logic.
In the midst of all this, I missed my blog’s third birthday! I hope you’ll forgive me, as I’ve collaborated with some of my favorite brands to give TWO of you something amazing.
