These Greek salad wraps are layered with crisp veggies and greens, creamy and tangy feta cheese, and of course, olives. They are super easy to make and pack for a healthy lunch or dinner!

Mediterranean-style salads are my favorite thing to have when am looking for a light and refreshing meal. These Greek couscous salad and Mediterranean-inspired orzo salad are two of my favorites.

But sometimes I am looking for a simpler recipe that I can prep in just a few minutes and that is convenient to pack for lunch or eat on the go. This is when these wraps come into play.

  • Easy to make. No cooking is required when making these wraps. Chop all ingredients, drizzle with a simple balsamic vinaigrette, wrap, and enjoy. 
  • Healthy and delicious. Made with fresh vegetables, greens, and feta cheese, these wraps combine different textures and flavors. They are packed with vitamins, minerals, and fiber. 
  • Can be prepped in advance. Prep all ingredients for these wraps in advance for a quick lunch or dinner on the go. 

You can eat these wraps as a light meal on their own when you are not too hungry. If you are, pair them with fries, chicken salad, or a serving of grilled chicken or fish for a protein boost. 

How to make Greek wraps 

You don’t need any cooking skills to make these wraps, seriously! Here’s how you make them. These salad wraps call for such Greek cooking staples as olives, feta cheese, and olive oil.

The ingredients

  • Vegetables. I use finely chopped tomatoes and cucumbers, as well as sliced onions for these wraps. Use red onions for a milder flavor. 
  • Mixed greens. The greens add color, flavor, texture, and lots of nutrients to the wraps. 
  • Feta cheese. Would these even be called Greek wraps without feta cheese? This crumbled cheese adds a salty and tangy flavor to the wraps and pairs perfectly with the fresh vegetables and greens.  
  • Olives. I use black pitted olives for my wraps. You can also use Kalamata or green olives. 
  • Olive oil. A staple Greek ingredient that not only bonds all flavors but also adds healthy fats to the wrap and makes it easier for the body to absorb the nutrients. 
  • Balsamic vinegar. To add some acidity to the vegetables. 
  • Dried basil. To season the vegetables. 
  • Wraps. I use whole wheat tortillas for these wraps to keep them healthy. 

The instructions

Step 1 – Chop and season the vegetables

Chop the tomatoes, cucumbers, and onion. Add them to a mixing bowl along with sliced olives and crumbled feta cheese. 

Drizzle with olive oil and balsamic vinegar. Add dried basil and mix well. 

Step 2 – Assemble and wrap

Lay out a whole wheat wrap and start layering the ingredients. Add the mixed greens and top them with the Greek salad mixture. Fold up and enjoy.

Variations

Like any good sandwich, you can easily customize every element of it, from the bread, to the filling, to the seasonings.

  • Add protein.  Adding protein to these wraps will turn them into a wholesome meal. Grilled chicken is a great option for these wraps. If you don’t eat animal protein, use chickpeas.  
  • Add a creamy component. Hummus, tzatziki sauce, and tahini will add great flavor and texture to the wraps. They are easy to make and pair well with these Greek salad wraps. 
  • Use pita bread. These wraps will feel even more Mediterranean when made with pita bread. If you have a few spare minutes, use this recipe to make your own flatbread. 
  • Use different wraps. Cut the carbs by using keto tortillas or egg wraps, or lower the calories by using low calorie wraps.

Storage instructions

Once assembled, these wraps should be eaten as soon as possible to enjoy the fresh flavor and crunchy texture of the vegetables. With this said, you can wrap leftover wraps with clingfilm and store them in the fridge for 1-2 days. 

The ingredients can be stored separately in airtight containers for up to 4 days.

How do I make these wraps vegan?

To make these wraps vegan, skip the feta cheese. Add hummus or tzatziki sauce to the wraps to make up for the creaminess of the feta and don’t forget to salt the vegetables. 

Are these wraps gluten-free?

These wraps are not gluten-free as they are made with whole wheat tortillas. Use gluten-free tortillas if you have gluten intolerance or celiac disease.  

How do you keep wraps from falling apart?

Warm the tortilla wraps before using them to make them softer and more pliable. This will allow you to wrap more tightly, thus preventing the wraps from falling apart.

These Greek wraps are loaded with feta cheese, olives, and fresh salad vegetables. They make a healthy and delicious lunch or dinner.

Ingredients  

  • 2 8-inch tortillas
  • 1/2 large tomato chopped finely
  • 1/4 small cucumber chopped finely
  • 1/4 onion onion sliced
  • 1 cup baby spinach
  • 2 tablespoons feta cheese crumbled
  • 1 ounce black olives pitted
  • 1 teaspoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1/4 teaspoon dried basil

Instructions 

  • In a large mixing bowl, add your tomatoes, cucumber and onion. Add your olives and feta cheese.
  • Drizzle your olive oil, balsamic vinegar and dried basil, and mix until fully combined.
  • Lay out your tortilla of choice and start by layering the mixed greens. Top with Greek salad mixture, fold up and enjoy!

Funny story: when I first got into eating Greek salads, it was at this little pizza place near our house in Atlanta. I’d always put the olives on the side and give them to Laura. Now I ask for extra olives! So line me up with a wrap (or two), ok? With extra olives please! 🙂
