If my healthy snacks can taste like dessert, I’m a happy man.

As someone who lifts weights regularly, I often consume protein-packed snacks between meals. Sure, a protein shake is great, but I like something I can eat/chew/consume. 

I have a few favorites on hand. These include protein cookies, protein donuts, and protein muffins. Recently, I’ve been making coconut protein bars that taste like candy!

  • They taste like bounty bars. Ever tried a bounty bar before? These taste exactly the same, except with a protein boost!
  • Just 5 ingredients. Coconut, condensed milk, powdered sugar substitute, protein powder, and chocolate!
  • No dairy or gluten. It also happens to be low carb and sugar free, too! 
  • Ready in just 5 minutes. The hard part is waiting for the chocolate to firm up!

These bounty protein bars are ridiculously easy to whip, but look impressive and exactly like the original chocolate bar. The center is packed with delicious coconut flavor, coupled with a punch of protein and the texture of the shredded coconut. The chocolate exterior is delicate, rich and highlights the delicious combination of chocolate and coconut. 

Ingredients You’ll Need 

  • Coconut flakes- Unsweetened shredded coconut flakes. DO NOT use the sweetened kind.
  • Sugar free condensed milk- Also known as keto condensed milk, it has all the texture and sweetness of the authentic kind, minus the carbs! 
  • Powdered sugar substitute- Skip the expensive store-bought kind and make your own!
  • Protein powder- I used vanilla protein powder, but plain or unflavored varieties also work. 
  • Chocolate– I used dairy free chocolate chips, but standard or sugar free ones also work. 

How to Make Coconut Protein Bars

Mix all the ingredients: Take a large bowl and add all the ingredients. Mix them together until a thick and sticky mixture remains. 

Freeze for 10 minutes: Transfer the mixture into a lined pan and freeze for 10 minutes. 

Cover in chocolate: Slice the mixture into bars then coat them in melted chocolate. Place them on a lined plate. 

Let it set: Refrigerate the protein bars until the chocolate has set.

Storing and freezing instructions

  • To store: Coconut protein bars can be stored at room temperature, covered, for up to four weeks. They will keep longer if you refrigerate them. 
  • To freeze: Place the bars in a ziplock bag and store them in the freezer for up to six months.

  • In a mixing bowl, add the coconut flakes, powdered sugar substitute, and protein powder and mix well. Add the sugar free condensed milk and mix well.
  • Transfer the mixture into a lined 8 x 8-inch pan and press down. Freeze for 10 minutes to firm up. Slice the mixture into 12 bars.
  • Add the chocolate chips in a bowl and microwave for 20-second increments until melted.
  • Using two forks, dip the coconut bars in the chocolate until completely coated. Place them on a lined plate and refrigerate the bars until the chocolate has firmed up.

Notes

TO STORE: Coconut protein bars can be stored at room temperature, covered, for up to four weeks. They will keep longer if you refrigerate them.

    I didn’t have condensed milk, so subbed it with honey + a bit of water and omitted the sweetener. They turned out great! 🙂

  2. Using the recipe with 2 scoops of casein making 10 bars(~57g each) will result in aprox. 7g of protein in each bar. Any suggestion to boost protein? What is the max number of scoops of protean can I use without messing the recipe?

  3. My bars pre-chocolate were a bit crumbly, and I have a dipped them in chocolate yet. Still chillin. I’m thinking that if they are too fragile to pick up, I will pour the chocolate over them? Maybe next time I’ll make this in an 8 by 8 inch pan adding a couple of eggs and bake, then cut into bars and chill before dipping. I did taste the coconut mixture though and it was really good.

    1. I wanted to say that after I froze the bars they held together nicely and turned out really perfect! Just like the pictures!

  4. I haven’t had one of those bars in years! Obviously, the healthy version looks much better. The only classic candy bar I’m ever excited to eat any more has to be a Reese’s cup. Somehow the imitations never quite do them justice!

  5. I don’t think I have ever tried a bounty bar! But, I’m looking forward to a copycat Kit-Kat bar and Twix bar! Also, I don’t know if something happened in the middle of the publication process, but the amount of servings doesn’t show up in the printable recipe!
