Lemon Coconut Fat Bombs Recipe

Growing up, I REALLY paid attention to what my mum put in my lunchbox. Most importantly, I paid attention to what homemade dessert or treat she’d tuck away at the bottom.

My mum would always set time aside on weekends for her famous baking. One of my favorite recipes she’d make was her no bake lemon coconut slice. The base was loaded with coconut and the icing was tart and sweet.

Granted, this dessert she’d make was anything but healthy- In fact, I’m pretty sure there would be very few ingredients in it I use often. However, it was delicious and I have no regrets.

Unfortunately, mum’s consistent baking wavered off as my sister and I grew older. Desserts got replaced with more prepped meals and the elusive coconut lemon combination became a distant memory…until now.

Lemon Coconut Fat Bombs

It’s been ages since I’ve had the chance to bite into one of those amazing lemon coconut desserts, but I’m bringing the classic combination back…with a healthy twist.

The lemon and coconut combination is an interesting one. As someone who loves the stark contrast of two different flavors, I’m definitely a fan of it. One of my favorite recipes involving the two are no bake lemon coconut bites and a recipe I’m working on, for lemon coconut ‘meltaways’.

Until then, I’m sharing a twist on my homemade coconut crack bar recipe, with some added zing. 

HOW TO MAKE HEALTHY LEMON COCONUT FAT BOMBS

It’s a simple, 4-ingredient, 3-step process, but requires you to move quickly.

You only need 4 Ingredients to make them-

  • Shredded unsweetened coconut
  • Coconut Oil
  • Pure maple syrup or alternative (see extra notes below)
  • Lemon rind

It only takes 3-steps to make them-

  1. Combine all ingredients in a bowl and mix well
  2. Freeze until firm
  3. Chop into bars and enjoy!

TYPES OF SHREDDED COCONUT

There are 3 main types of unsweetened dried coconut you can use, but some are better options than others. 

Macaron style shredded coconut/Desiccated coconut- This is the best kind to use, thanks to its extremely fine milled texture. Using this form will allow the bars to hold significantly better. 

Coconut Flakes- Large flaked coconut will need to be blended to a finer consistency, otherwise you will be left with a very flimsy batter. Using a good quality food processor or high-speed blender is key!

Shredded Coconut Flakes- These are the most common shredded coconut you’ll see in supermarkets. They will technically work as is, but depending on what sweetener you use, it may be harder to form. It would also be best to blend/pulse these to a finer texture. 

THE BEST HEALTHY REFINED SUGAR FREE LIQUID SWEETENER

While this recipe works best with pure maple syrup, you also have other options which work just as well. 

Light agave nectar and dark agave nectar can both be used, along with manuka honey.

Please note- Manuka honey is NOT strictly vegan, and you may need an extra tablespoon or two to avoid the batter being gritty. 

HOW TO KEEP THIS RECIPE KETOGENIC AND SUGAR FREE

To keep these paleo vegan lemon coconut bars 100% sugar-free and keto friendly, you will need to make slight adjustments.

Use a monk fruit sweetened maple syrup (NOT sugar-free syrups sweetened with sucralose) or a sugar-free syrup which has a similar texture to pure maple syrup and is sticky.

Readers have previously used stevia drops, along with some liquid, but I cannot vouch for that. 

LEMON ZEST- FRESH VS DRIED

While using fresh lemon zest would be best, it isn’t always the most easily accessible. I opted to use dried unsweetened lemon zest (sometimes referred to as lemon peel) and it worked great!

These easy no bake lemon coconut crack bars aren’t just called Crack Bars for a reason- You really cannot stop at one! The delicious tang from the lemon and the subtle sweetness from the coconut makes these the ultimate healthy no bake dessert. Actually, they can be a healthy paleo, vegan and keto snack, which happens to be low carb and sugar free!

Instructions

  • In a large mixing bowl, combine all your ingredients and mix well. 
  • Line an 8 x 8-inch pan with parchment paper. Pour the batter into it and press firmly in place. Place in the freezer. 
  • Once firm, remove and using a slightly wet knife, cut into bars.
