Bonjour Mon ami! Am I ever glad its Friday afternoon right now- I just finished an exam where I literally wrote out of my…derrier. I swear with EVERY exam I have ever done, everything I study is NOT on it. Seriously. EVERY. EXAM.

Anyway let’s not dwell on that, its almost the WEEKEND! I almost forgot but yesterday was my 100th post! I’m so thankful to have shared it with Amy, who is also making an appearance on here this weekend…I should just rename this Amy Week!

Have you guys heard this recent article about the man who sued his wife over giving birth to ugly children, in particular his daughter? For those unaware, the man successfully sued his wife for $120,000 because she married him without telling him that she had prior it, undergone $100,000 worth of cosmetic surgery. I still don’t know what to think of it….

There has been a trend with Summer approaching for people to decrease their meat consumption and focus on vegetarian sources to ‘optimum health.’ Yes, another fad that they are trying to portray. I just look at it in a humorous way.

Similarly, every front page of any fitness magazine is centralised around burning a certain amount of calories in the shortest amount of time. I should write the Arman Weekly. The cover (boy) for the first issue will be this. BOSS.

Now for the recipe. A fair while back, I talked about how I LOVED the smell of cinnamon raisin bread however the taste was always underwhelming. Not that it was bad- its just I always expected to TASTE the cinnamon and actually have more than 5 raisins. Last week, Khushboo posted a recipe for a flatbread she had been (subconsciously) taunting me with for the last couple of months. Since she posted the recipe, I had made it at least once a day!

A few days ago, after leaving my exam I went past a cafe which had the most tempting smell of cinnamon raisin bread. Immediately, the craving struck. Knowing I was not going to go out and buy an entire loaf to be once again disappointed, I decided to see if I could mould the basic flat bread recipe and put a cinnamon raisin spin on it. I wanted the flat bread to be thicker (so I could lather butter on it) and more dense so with abit of kitchen magic, I found success!

 5 Minute Cinnamon Raisin flatbread

5 minute Cinnamon Raisin Flatbread
Serves 1
Never waste your money only using up half a loaf of bread- This single serve 5 minute cinnamon raisin flatbread is a delicious alternative made over the stovetop! No yeast, no oven and full of wholesome ingredients- Vegan, gluten free and refined sugar free!

Ingredients
  1. 1/4 cup gluten free oat flour
  2. 1 T coconut flour (or an extra T of flour)
  3. 1/2 T cinnamon
  4. 1 T sweetener of choice
  5. 1/4 cup non dairy milk
  6. 1 egg white*
  7. 2 T+ raisins
Instructions
  1. In a mixing bowl, combine the oat flour, coconut flour, cinnamon and brown sugar and mix until well combined.
  2. In a small bowl, mix the milk with the egg white then add to the dry mixture. Mix very well then stir in raisins.
  3. Heat up the frying pan on very low heat and spray with oil. Pour batter once hot and cover for 2 minutes until edges go crispy then flip and allow to cook for another minute.
  4. Plate up and lather with a spread of choice (this goes so well with butter!)
Notes
  1. * For a vegan version, add in extra 2 T liquid of choice.

Sooo this rounds off a crazy study filled week for me- I have one exam to go and CAN. NOT. WAIT. Hope you all have a great weekend, and be kind to yourself- you deserve it.

  1. When we were young my mum only ever gave raisin flat bread to us as our ‘treat’ – we loved it, and to this day I think her raisin flat bread was one of the best fruit breads. I will have to try adding cinnamon to it – yummo!
    I heard about that couple. I read that the photo attached to the stories online is not actually the couple as they only had one child (a girl) before he divorced & sued her. When I told me husband about it he wasn’t surprised; apparently they’ve been predicting this would happen in China!?

  2. er YUM! I’m so happy that you are loving the oat flatbread recipe and even happier that you remixed it into a sweet alternative. LOVE cinnamon raisin anything and can’t wait to try this out. My sister is visiting this weekend and I just emailed her this post with the subject line: “Sunday brekkie?” Will let you know how it turns out :)! I read that article yesterday and was so horrified- the things people do for money! Deceit or not, the father has probably ruined his daughter’s self-esteem for the rest of her life.

  3. I would laugh at the calories burnt joke, but after my recent luck in the kitchen, I should probably refrain. That being said, I’ve never tried baking my own bread because working with yeast intimidates me — just one more step that can go horribly wrong. Flatbread, though? Sounds perfect. And I know what you mean about the underwhelming flavour in cinnamon raisin bread — it’s even worse if the raisins taste burnt.

    1. On the same wavelength, my friend. I actually bought yeast yesterday to try out Lindsay’s pretzel bites…although I am VERY nervous. Anything requiring yeast talks about letting dough sit…sit in a chair?

      Don’t even get me started on the burnt raisin. I swear its an art in itself to get the toast to that perfect non burnt raisin state.

  4. I LOVE this variation! Minus the raisins…. I have never been able to get down with dried fruit. Weird, I know. I’mloving making every variation possible of K’s flat bread too! I tried it with a little egg for make breakfast too! All cinnamon. 😉

    1. I actually despise dried fruit on its own- it has to be in baked goods or in raisin toast.

      …I went through a time where I carried cinnamon with me when I travelled… don’t even get me started on the red pepper flakes.

  5. Cinnamon raisin bread = heavenly. Definitely giving this a shot! Oh meant to tell you I adapted your kabocha cookies and used pumpkins and peanuts instead. Hope you don’t mind 🙂 that is crazyyy about the “ugly” family. So sad. Making bread that actually rises terrifies me so I stick to the easy stuff. Like this.

And I hadn’t heard of that family, but that’s just depressing. His daughter is going to need a LOT of therapy…

  10. I can’t believe that guy sued his wife!! That’s so crazy. I’ve made quick breads before, but never flat bread. This recipe looks so easy! I have to work tomorrow so I didn’t make any other weekend plans. I’m just excited to sleep in and stay in the same zip code for 24 hours on Sunday!

  14. SO insane about the man suing his wife! But also insane that that little tidbit of THAT MUCH cosmetic surgery wasn’t brought up prior to the nuptials! 😯 And omg, the “how to burn 800 calories”? I had to get up and carry the laptop into the next room to share that one with the man-friend! Bahaha! Gah, I hate all the diet talk when once summer hits…it’s like HELLO sun…now bring on the body shaming! What?!

    Love love LOVE cinnamon raisin bread, but I’m right there with ya…never enough cinnamon OR raisins! I’ve actually made a loaf once…a couple of years ago, but gah, it took for-freaking-ever! I love homemade bread…storebought just doesn’t compare, but ain’t nobody got time for that! 😉 Ps, Ever noticed that the loaves that DO have the best balance of cinnamon raisin goodness weigh like 20 pounds?     This weekend….what am I doing? NOT working! NOT stressing!       So true about cinnamon raisin bread chock full of the good stuff weighing a tonne… and the associated price tag with it. I was telling Amanda about how there is also the fine line between burning cinnamon raisin toast…stupid bread.

    1. I hope so- its so good! I saw a recipe for a ‘quick’ bread involving letting dough sit for 2 hours…It made me question their definition of ‘quick’

  16. I read about that man suing his wife awhile ago too. It kind of made me sick to my stomach. And makes me never want to get married… Haha. Just kidding kind of. But I also don’t ever plan on getting plastic surgery so that covers my bases there. 🙂

    Really though, I don’t understand how that man won his case. I want to say that nothing like that would ever fly here, but I just don’t know.

    I also have the same fear of the bench press and shared it with Tara the tip she gave me is that you can always just bring it to your chest and roll it down your body and sit up instead of thinking you have to lift it back up.

    1. That sounds so smart- I’m so excited, 1 more week and then I’ll start one! although one time, I dropped the bar similarly and it was hurting my chest and the guy standing next to me just watched then continued using the cable cords..argh!

    I read that short article you linked about the husband suing the wife…I like how he said, “I married my wife out of love” but then they had problems once he found out she wasn’t naturally beautiful. Cannot believe she has to pay him 120k!! Also how messed up are the kids going to be psychologically when they find out their father thought they were so ugly he sued their mother?? Ca-ray-zy.

    1. I really despise dried fruit by itself, but in a bread….thats the only way 😉 I’m going to post a cheese twist on it for Monday’s post.. so maybe if you like cheese haha!

      Exactly- the kids are the ones who suffer through all of this. Stupid parents on BOTH counts.

    1. Not to mention frying it in butter! i know ‘ghee’ and ‘coconut oil’ are the new ‘frying’ means but eggs fried in butter…Ok my breakfast is sorted for tomorrow. And the only reason to make it thicker is to add topping. Defeats the purpose of ‘flat’bread. 😉

  21. I love cinnamon raisin bread…and this looks fantastic! I never make bread, but I think I am going to have to try it. And the man suing his wife…I don’t even know what to say. One, that much plastic surgery and she never thought to tell him? And two, they’re his kids! What the heck is wrong with him?!!! They’re both idiots in my opinion. I guess that is a strong word but really?! I just can’t even fathom.
