When it comes to cozy oatmeal breakfasts, I love some sugar cookie oatmeal, hot chocolate oatmeal, and these apple pie oats. 

The cooler the weather gets, the warmer my breakfast becomes. Like clockwork, the moment the last day of Summer switches to the first day of Fall, my breakfast goes from overnight oats to stovetop oatmeal. To be quite honest, I actually really like the transition. As much as I love overnight oats, after having it for a good half of the year, I’m ready to give my tastebuds something a little different. While the texture differs, the flavors tend to stay the same. However, when the holiday season rolls around, I love giving a festive spin on them. As I am a huge apple pie lover, it made sense to make an apple pie inspired oatmeal! 

This warm and cozy oatmeal is what motivates me to get up in the cold mornings. A warm, thick, and creamy oatmeal full of warming spices and topped with a sticky apple topping. 

No dairy or sugar is needed, but you’d never tell. For such a comforting recipe, you’d be surprised that it is secretly healthy! It’s packed full of fiber and protein and is completely naturally sweetened. I love adding some plant based protein powder to give it some staying powder, and a tablespoon of coconut flour, which thickens it up even more! 

Perfect for a quick and easy breakfast, you can make it in both the microwave or stovetop.

Ingredients to make apple pie oatmeal

For the oatmeal base

  • Rolled oats– Either traditional rolled oats or gluten free rolled oats. 
  • Salt– Brings out the sweetness of the oats. 
  • Milk of choice– I used unsweetened almond milk, but any milk can be used. 
  • Apple pie spice– A mix of cinnamon, nutmeg, ginger, and cloves. 
  • Granulated sweetener of choice– Any sweetener can be used. White sugar, brown sugar, coconut sugar, or sugar free subs. 
  • Coconut flour– My secret ingredient! Coconut flour gives the oatmeal extra thickness, which is similar to what a French toast casserole would taste like! 
  • Protein powder– Optional, but gives a huge protein punch to them! 

For the apple topping

  • Apple– Any kind of apple can be used. If you prefer a more tart topping, use a granny smith. 
  • Cinnamon– The flavor shines through, especially when mixed with the warm apples.
  • Brown sugar– Adds extra sweetness. 


How do you make apple pie oats?

In a saucepan, add your oats, salt, and milk and bring to a boil. When it begins to simmer, reduce the heat to low. Add your spices and sweetener and whisk until combined. Let the oats continue to simmer while stirring regularly, until thick and creamy. Add the coconut flour and protein powder, and mix very well, until combined.

Remove the oats from the heat and distribute them into bowls. Top with the apple mixture and enjoy immediately.

To make the apple topping, chop your apple and place in a microwave safe bowl, along with 2 tablespoons of water. Microwave for 2 minutes, until tender. Add the cinnamon and brown sugar and mix well. Microwave for a further two minutes.

Storing and freezing tips

  • To store: If you prepare multiple batches of this oatmeal, store it in the refrigerator, covered, for up to 1 week. You will need to thin it out with extra milk before reheating. 
  • To freeze: Place single portions of the oatmeal in freezer friendly containers. Store in the freezer for up to 2 months.
  • To reheat: Either stovetop or in the microwave. Be sure to add extra milk, as the oatmeal will have thickened up considerably.

  • In a saucepan or microwave safe bowl, combine the rolled oats, salt, cinnamon, sweetener, and milk of choice. Simmer on medium heat until most of the liquid is absorbed. Once thick, add the protein powder and mix very well. Add the coconut flour and continue stirring until a very thick batter is formed. Remove from heat and pour into a bowl.
  • In a microwave safe bowl or in a small saucepan, heat the apple with cinnamon, nutmeg, and sweetener until caramelized. Remove from heat or microwave and top your oatmeal with it.

  7. This might be a stupid question, but when you carmelize the apple on the stove/in the microwave, do you add water to it or just use the apple, cinnamon and nutmeg? I’m wondering if it will burn or not.

  8. I made this with canned pineapple instead and it was so good. It literally smelled and tasted like French toast! (no kidding, huh?) My family gave it 4 stars out of 5, which is saying a lot because they don’t like oatmeal at all. Definitely a keeper!
