No Bake S’mores Protein Cookies

So not only am I converting my favourite desserts into healthy oatmeal puddings, I seem to be doing them in snack form too. I can live with that. I also seem to have taken the No Bake Boy title to heart– and whipped out more in this genre.

After my success with using kettle corn in my no bake Kettle Corn Granola Bars, I wondered what else could be whipped into a flour like consistency and add the necessary flavour to other snacks.

 I love quest bars because not only do they have a solid dose of fiber and protein, but they actually taste like what they claim- and you know how I feel about false advertising. That is why with these cookies, they had to taste like an actual S’mores- minus the burnt tongue and sticky fingers….and a campfire.

You could be raising your eyes and thinking ‘How can they be healthy? They have marshmallows and chocolate chips in them!’. Well, build a campfire and jump into it bridge and get over it. These cookies tick the boxes in terms of nourishing carbohydrates from the oats, protein from the protein powder and a dose of those healthy fats thanks to the nut butter. Why not add something fun too? Thank you marshmallows and chocolate chips.

High in protein? Yep. High in fiber? Yep. Healthy fats and nourishing carbohydrates? Yep. Some fun add ins? You bet. You could probably call these a green vegetable and count it as part of your 5 a day…

Just kidding, we’re not a bunch of twats here. Just make them, eat them and dance around a (mock) campfire.

No Bake S'mores Protein Cookies

A delicious No Bake protein cookie which tastes exactly like a S'mores bar....minus the campfire!

Ingredients

Instructions

  • In a large mixing bowl, combine the rolled oats, oat bran, graham cracker crumbs, protein powder, natvia sweetener and salt. Set aside.
  • In a small bowl, combine the nut butter of choice and brown rice syrup and microwave for 2 minutes, or until melted.
  • Pour the wet mixture into the dry and mix until well combined. Add the milk then slowly incorporate the mini marshmallows, as they will start to melt.
  • Form into palm sized cookies and lay on a baking sheet or plate. Evenly top each cookie with chocolate chips and freeze for an hour or refrigerate for 4 hours/overnight.

Notes

* I used Dandie's vegan mini marshmallows
Avoid using a chocolate or cinnamon flavoured protein powder as it detracts from the s'mores taste.
Similarly, try to stick to a mild tasting nut butter like cashew or almond.
You can sub the brown rice syrup for honey (if not strictly vegan) or maple syrup, but add an extra 2 tablespoons.
Depending on the protein powder of choice, you may need more milk

    1. roasting marshmallows over a campfire + grabbing a slab of chocolate in the hopes that it will melt in between two graham crackers never really did anything for me. I’m going camping real soon and I’m totally bringing these boys to the yard with me 😛 I may or may not share though

    2. Toasted marshmallow jelly beans are okay but my favorite was always the tutti frutti…And, from the regular jelly beans, I always loved the black licorice which most people hate. It’s weird that I love them since I was always a picky eater.

      1. What! Tutti Frutti was that ‘weird’ flavour along with buttered popcorn and tabasco lol.

        We’d fight over the black jelly beans.

    3. Just got back from a camping trip involving some serious s’more making business! These cookies are just what I need since I’m a little sad the trip is over….
      I totally forgot about the toasted marshmallow flavored jelly belly! Yummy! I actually live pretty close to the jelly belly factory and have been there! I may have to take a short road trip there soon!!!
      I think I eat more veggies in a day than an average person eats in a week!

    4. I’ve been going smores crazy with this pregnancy. We have a gas stove so I toast the marshmallow on that. I’ve also had the bad habit of microwaving marshmallows and then throwing everything in and stirring it up. I must be stopped! These look great though and much healthier than I’ve been going about it!

      Speaking of campfires, he wanted to have one with his friends last night. Mind you, it was literally pouring buckets of rain when he told my mom his friends were coming. He’s a great planner.

    6. Sneaking protein into sweets, especially cookies, is a huge talent. Cookies are one of those things that I can never just eat one, so I think upping the protein and making it out of these awesome ingredients (Hello, oat bran!) would make portion control much more doable 🙂 a little bit better than the traditional s’more (even though those are soooo delicious too and make me think of a bonfire with friends).

    7. Oh em gee…you had me sold at the mere mention of ‘smores’- I’ll take 20 :)! It’s been forever since I made real s’mores i.e. with graham crackers, dark chocolate and marshmallows. However I did have a variation of s’mores last year at a restaurant- they brought mini fires to the table with caramel biscuits, green tea matcha white chocolate & marshmallows to roast over the fire. It was delicious and a fun dessert to see on a restaurant menu buuuut the the real deal is still the best!

    8. I have never had a smore… I am loving your dessert kick lately! Veg wise I try to get a lot in… between 7-10 a day. I had hardly any on holiday though unless cheese counts as a vegetable… Time to get those greens in 🙂

    9. These look delicious!! When I was in Australia, I tasted their marshmellows and they were weird (no offense, maybe I just didn’t find the right brand), just not like the American marshmellows. I remember talking about s’mores with fellow Australians and explaining what they were. I did enjoy some on a short camping trip I took, but the American marshmellows make them better and can’t wait to try out this recipe as I still have yet to have a s’more this summer. Also I think my favorite s’more treat is having a s’more cupcake with the graham cracker crust on the bottom of the cupcake and a marshmellow frosting. Very delicious!!
