I should consider renaming this blog to the ‘no bake blogger’. Or the ‘no bake boy’.Or something with the word lazy….because no bake = easy = my kind of recipe.

I’m keeping with my promise to make paleo friendly recipes for Niki- although I may or may not have been eating them myself. I like to refer to it as quality assurance. I mean, it’s rude to serve other people food which isn’t delicious. Right? RIGHT?

Back to the recipe- I kind of got slightly excited with the almonds. Almond butter and almond flour are the same thing except ground to different levels of perfection. If I didn’t add a few other ingredients, I may as well have just bought a package of almonds and called them breakfast. However, I am not THAT lazy.

 

The reason for the multiple variations of them is one thing- Texture. Almond butter, almond flour and whole almonds are all the same thing- but the textures of each of them are different. One of Niki’s favourite cookies are these Persian Almond cookies which she used to eat for breakfast. Those cookies were definitely not Paleo (Think almonds, glucose syrup, butter and almond meal) but now she has a substitute for the two weeks. Or three weeks. Any bets it will be close to a year the way she’s going.

These no bake cookies don’t have to be limited to breakfast but cookies for breakfast sounds sexy. Not only are they suitable for Paleo folks, but if you follow a Vegan, Grain Free or Gluten Free diet- you can go to town on these two.

No Bake Triple Almond Breakfast Cookies

A no bake breakfast cookie recipe which uses almonds in three ways- ready in under 10 minutes! Paleo, gluten free and vegan!

Ingredients  

  • ¼ cup almond flour sifted
  • 2 tablespoon coconut flour sifted
  • 1 teaspoon coconut sugar adjust to taste
  • ¼ cup almond butter
  • ¼- ½ cup almond milk
  • ½ cup whole almonds divided
  • 1 teaspoon cinnamon
  • 1 teaspoon sea salt
  • 1 tablespoon shredded coconut
  • Optional Add ins-
  • 1 scoop of protein powder
  • Homemade paleo chocolate chunks
  • Dried fruits
  • Chopped nuts

Instructions 

  • In a small mixing bowl, add the almond flour, coconut flour, coconut sugar, cinnamon and sea salt. Add the almond butter and mix well until a crumbly batter is formed.
  • Slowly add in almond milk, one tablespoon at a time, until a firm dough is formed. Add in the shredded coconut, half the whole almonds and any other mix ins as desired.
  • Form into palm sized cookies and plate.Add remaining whole almonds on top and refrigerate for 2-4 hours to firm up.

Notes

These cookies are quite soft once left at room temperature- best to store them in a fridge/freezer.

  1. Mmm these look awesome! I love having baked goods, but they’re usually only good for the first couple days. I’ve been known to make a whole batch of fresh brownies and only eat one. I think I need to have some more “no-bake” recipes in my life!

    1. Story of my life- Hence- freeze them! That way, you have several on rotation. And bars thawed are delicious…or brownies.

  3. Nope… you’re not making me choose between bake and no bake — I need both. No bake in the summer because it’s too hot, but bake in the winter because it’s too cold. And how would I get banana bread without baking? Or energy bites with baking? Both, and that’s my final answer 😛

    Oh, and I love your attention to texture detail… and that we’re totally on the same wavelength today with the almond cookies 😛

  4. Almonds are my favorite nut so this almond cubed cookie looks delightful.
    Apples vary in texture; fresh apples, dried apples, applesauce, apple juice, all offer different tastes and textures.
    I am far too lazy to bake and my favorite sweet treats are of the ice cream/gelato/frozen yogurt variety which is not part of your question but I’ll vote un-baked.

  5. Yesss these look so flipping good! I want to make them right now. Except I currently already have almond butter energy balls, chocolate zucchini muffins, and raw chocolate almond butter cups sitting in my fridge. I’ve been bored this week so I’ve just been doing lots of cooking and baking/unbaking haha. I really like raw and baked recipes – they’re different, but both are so good!

    1. …..Feel free to ship some over to Australia. Seeing as their in your fridge, they’d probably make the trip over here.

      PS I spoke to Davs today and she told me she went to your bakery in Burlington and bought 4 cupcakes. When I visit, we are buying cupcakes.

    I think it’s totally acceptable to taste test a few. I mean you gotta make sure they aren’t poisonous or anything! You were just fulfilling your brotherly duties.
    Since there’s also almond milk, you could even call these quadruple almond breakfast cookies. Though triple does sound better. Quadruple is kind of hard to say. 😉 I’m loving all your paleo recipes and am *thinking* about doing a little paleo challenge myself…. though it might break down the moment I get to work and realize that I can make pizza for dinner 😛

  7. Pinned! 🙂 It’s so darn hot here right now that I’m loving the idea of a no-bake cookie, so this way I don’t have to turn on the oven. These sound delicious and I’m happy to say I have all the ingredients at home right now! Yay! I can’t wait to give them a try and I think I’m going to add in a scoop of protein powder to make them a perfect filling snack to take to work with me.

    1. Thank Holly- if you do add protein powder, up the almond milk a tad- I found when I added it in I needed more (I used a casein blend which is pretty thick!)

  8. Scratch that, you should write a paleo breakfast ecookbook. You can make a paleo version of my pb &j chia pudding that also looks like diarrhea.
