Naturally gluten free, vegan and paleo friendly, there’s a protein packed and oven version too!

Happy Thursday friends and we’re back with another monthly round-up.

Not going to lie- I was kind of nervous over the last two months over this month’s theme. Why? In September, Alexis threw in the suggestion of making ‘chia seeds’ the September ingredient. Luckily for us, we went with pumpkin– In my eyes, a much better option. (Alexis was totally trying to sabotage me because she knew I thought chia seeds were a flour….kidding. Sort of..)

This month, we had the option between apples and kale and long term readers know my thoughts on kale. Kale is good for swatting people over the head with and nothing else. Fortunately for me, apples won and I burnt kale in its honour. 

Sorry kale lovers. I’ll make no bake kale bites one day. 

So this month’s theme is apples, just like Gweneth Paltrow’s child. Before I share my recipe for a healthy 1 minute apple cinnamon muffin, let’s check out what my (poison) apples have offered this month-

This healthy 1 minute apple cinnamon muffin is your quick fix for an instant bakery-style treat in terms of taste and texture! While it is much healthier that a standard bakery style muffin, it is still incredibly fluffy, light and has a muffin like texture! It’s full of fiber, has barely any sugar and is uses applesauce to give it the apple flavor and moistness! While I used a store-bought unsweetened applesauce, I have no doubts this would taste even better with homemade applesauce! Naturally gluten free, vegan and paleo, this has also been tested using a toaster oven as opposed to microwaving! 

HACK- I know I have many protein powder users out there and this does indeed work with protein powder added in- Simply add a scoop (around 30 grams) and microwave or bake as usual and voila- You’ve just added a nice protein punch!

Instructions

For the microwave version

  • In a small mixing bowl, combine the flours, sweetener, cinnamon and baking powder in mix well.
  • Add in your egg white, unsweetened applesauce, dairy free milk and mix until fully incorporated.
  • Microwave for 50 seconds (or up to 2 minutes, depending on your microwave) and remove. Sprinkle with extra cinnamon and coconut palm sugar, if desired. Enjoy immediately.

For the oven version

  • Pour batter into an oven safe dish and bake at 350 for 12 minutes, or until a toothpick comes out clean.

Notes

* If you omit the oat flour for almond, you'll need a dash more dairy free milk.
** Depending on the starch you use and the brand of coconut flour, you will most likely need more than 1 tablespoon- Adjust accordingly.

    2. Hi Arman. I want to try this Healthy 1 minute cinnamon apple muffin cause it looks and seems to be so YUM! So I entered the ingredients from your recipe and added it into the calculator on My Fitness Pal which I use daily.

      I dropped the oat flour, am using cashew milk for the non-dairy ingredient (really low in calories!), using one large egg white as you have in the recipe (since the large egg whole would up the total calories quite a lot, and once I saved the recipe (yep double checked it) I find this comes out over 100 calories – 109 (for one if this makes one). I also have not accounted for the increase in coconut flour and cashew milk for the drop in the oat flour, and so before adding those two extra bits the 109 is the total. So I am wondering how you tallied “less than 100 calories”?

      Just askin’ – as I realize 9 calories over the 100 is not that big a difference but yeah, when counting (and I really do need to count everything, as if I go over much at all I gain right away. )

      I am working hard to get down in weight (gads wish someone had told me years ago all the issues one can have health wise when one grows up overweight!) and it is working – but occasionally I do want to just enjoy something like a muffin (and they are sooooo weight adding for me usually but then the calorie count for most is really high!). So guess I need to just eat the one and then compensate somehow other places in my day … but it does make me wonder … Could it be the TYPES of coconut and almond flour? I find that kind of strange – cause they are pretty basic! 🙂

      Love your blog and yeah am trying things here and there…have saved a bunch of your creations in my recipe folder. Thanks for all your untiring efforts to make eating healthier!

        Thanks so much for the comment and feedback! Like you, I used to assume all flours/etc were created equal but they atually aren’t- Two different coconut flours I have on hand are around 50 calories apart for the same serving size! Same goes with nut butters or even dairy free milks from the same nut!

    3. Oh we are in agreement on Kale. I tried and tried to like it because everyone was raving about it. I just can’t step over that threshold to tasting goodness where kale is concerned. Apples, on the other hand, are a huge favorite of mine.This cinnamon muffin is dreamy first thing in the morning.

    5. Being over apples is actually possible? No way! While the kabocha harvest from our garden was rather disappointing this year the apple haul made up for it. Oh, sweet Pinova …
      This recipe is very similar to how I prepare my standard mug cake so I know yours would come out well. Now go and create a kale and chia seed frosting, ‘kay ;)?

    6. I’m disowning you if you ever make no bake kale bites. I had a very bad experience with kale back in the day, and I don’t think I’ve ever gotten over it. Stick to apple. It always wins.

I just love the combination of apples and cinnamon, I even have a perfume that smells (almost) like apple pie and I can easily spare a minute to make myself this absolutely delish looking muffin – because I know it will be worth it! But I was wondering what the T stands for in the recipe? Google says a ton but I think google and I are talking past each other. 🙂
