So this is the 3 Ingredient low carb/protein packed recipe week….in association with my low carb diet week.

How’s it going? Well, it’s not TOO bad, but that is primarily due to me allowing myself two caffeinated drinks per day. 

Living on the edge here, friends. 

Anyway.

I know many of my readers are avid gym goers (along with many of my friends too!) and often enjoy a protein shake pre workout, post workout or even both. Many of them even enjoy one after dinner before going to sleep (this is the beauty of casein protein powder here). The basics of their protein shakes is pretty much protein powder with water/milk and sometimes, fruit. 

Living on the edge.

However, if given the choice between a shake or a cookie (with pretty much the same macros), which would you pick? 

Cookie. 

Please.

If you have the option of making a cookie in the same time it takes to make a cookie, I’d go the latter route. The only difference between these two (in terms of ingredients) is just the addition of coconut flour, which works as an amazing binder. 

Another epic benefit of this low carb protein packed cookie is that you can enjoy it two ways- Either soft and fudge-like OR firmer- although if you go the latter route, I’d recommend prepping it in advance, or having the patience to wait 10-15 minutes to freeze up in the fridge.

One more benefit of this over the shake?

It’s GIANT.

This giant low carb cookie for one is literally the size of your face and needs just THREE ingredients and less than five minutes to whip up! Swap out your daily protein shake for this edible option which has the most amazing texture which is easily customizable! Unlike traditional protein bars or cookies on the market (which are packed full of preservatives, additives, artificial ingredients and Beyonce’s left shoe), these need just THREE basic ingredients- Protein powder, coconut flour and liquid of choice to form into a ‘dough’. Based on the ingredients used (either vegan protein powder, casein protein powder or paleo protein powder), this low carb protein packed cookie is naturally gluten free, paleo, vegan, dairy free and sugar free! 

HACK! While originally 3 ingredients, I DO recommend the optional nut butter and/or pure maple syrup in the mixture. It gives it a more classic ‘cookie’ texture and would be a more balanced all around snack!

Serves 1
You only need three ingredients and less than five minutes to whip up this GIANT no bake cookie for one which is also low in carbs! No nuts, dried fruits or sticky sweeteners are needed, but are optional- It's also suitable for those following a vegan, paleo, gluten free, dairy free and sugar free lifestyle!

Ingredients
  1. 1 scoop vanilla protein powder
  2. 1 T coconut flour*
  3. Milk of choice
  4. 1 T nut butter of choice (optional)
  5. 1 T pure maple syrup (optional)
  6. Sea salt, to sprinkle over
  7. Chocolate chips/dried fruits/nuts etc (optional)
Instructions
  1. Line a small plate with parchment paper and set aside.
  2. In a small mixing bowl, add your protein powder and coconut flour and mix well. If using the nut butter/maple syrup, add it right now. Using a teaspoon, add milk of choice until a VERY thick batter is formed.
  3. Using your hands, form a small ball and press on the lined plate. Top with optional add ins, sprinkle with sea salt and enjoy (for a fudgy cookie) or refrigerate/freeze until firm.
Notes
  1. * If you use casein protein powder, you can omit it, however you'll have a very gummy cookie. You can sub the coconut flour or almond or oat flour, but you'd be best to add the optional nut butter and maple syrup for texture.
  2. Cookie is freezer friendly.

      1. This cookie and the and the paleo cookie dough balls are staples in my diet I go through way too much coconut flour. They also have the caffeine content on sodas here in Canada too bro . Cheers

  5. Casein has changed my LIFE with smoothies! I’m trying to cut out dairy but casein will probably be something I stick to until I completely eliminate dairy. I’ve never actually tried it in baking–I usually stick to vegan proteins for that!

  6. My Mom makes me stop at 3 cups of coffee per day but I usually fight her and make more lol. Can we please just make these cookies and then eat them in the foam pit and just have a party?

  7. These cookies look really tasty! My body cannot handle regular coffee — only decaf for me, or I will be bouncing off the walls! 🙂 A protein shake is fine now and then, but I prefer protein bars.

  8. I can handle like one or two cups of coffee in a day, but I don’t drink it very frequently. I prefer to consume it for the taste rather than for the energy boost. I also can’t seem to handle coffee first thing in the morning – my digestive system seems to prefer it if I wait about an hour after breakfast.

    I do drink protein shakes occasionally, but I usually prefer food I can chew 😀

    Oh, also a question: is whey protein okay for this recipe? That’s all I have at the moment.

    1. ooooo I LOVE the taste too- It is a double edged sword argh!

      Unfortunately, all the whey protein powders I tried became too sticky and difficult to form into a cookie. I’d stick with casein or brown rice or if you DO use whey, add more coconut flour 🙂

  9. I can handle ginormous amounts of caffein and I can also handle ginormous cookies 😀
    I guess by tomorrow morning Stefan will have eaten all brownies so I think I’ll make this one my breakfast tomorrow.

    Some friends and I have a what’s app group for funny shit and we crack ‘living on the edge’ jokes all the time. The crappier the better 😀

  10. I’m beginning to think you can make anything with just three ingredients. Seriously, when are we going to get a recipe for no ingredient brownies!? Honestly, I am impressed. I can handle copious amounts of caffein, though I really don’t tend to drink protein shakes much at all.

  12. Hey! What can I do to substitute protein powder? Seems like many of your recipes involve protein powder, but I’m not ready to spend $30 on a big container of highly-processed protein powder – most of which also includes allergens, GMOs, artificial flavours, preservatives, etc.

    Also, I’m curious as to why you choose to add protein powder to so many of your recipes. I am sure that you are brilliant enough to devise variations of all your recipes that focus on whole foods.

  14. How many calories is this cookie and nutrition as in fat, fiber,protein, sugars, etc. I drink a crazy amount of coffee and I can see me with this cookie and a coffee!
