For the first time in a long time, I actually timed myself from start to finish with a recipe.

Today’s recipe was inspired by a brunch appetiser I had enjoyed in New York back in August of 2015. The concept of a brunch appetiser is pretty much genius- A small bite of something sweet before your main (foodie) event.

I had met up with some friends in Astoria, a suburb part of Queens. While known for their delicious ethnic food (in particular, their Greek and middle eastern cuisine), they also knew how to serve brunch in style. Upon seating, we were provided menus, but told for an additional $5, we could get a brunch appetiser. The server informed us that a brunch appetiser was something sweet or savory, served in a (larger than normal) shot glass. I opted for the ‘sweet’ choice, which was a parfait made up of a crumbled apple cinnamon muffin, layered with Greek yogurt and topped with apple pie filling. Most of my friends went with the savory choice, which was some egg based chowder, with a tiny bread dipper in the centre. 

Delicious.

Anyway, while the thought of brunch appetisers was constantly on my mind, even more so was the idea of a parfait with a MUFFIN layered between the yogurt. Typically, I’d only had parfaits with berries or granola sandwiched between them but a muffin? Never….until now.

Saying that, the idea of making a whole batch of muffins for a parfait was slightly off-putting. 

Why?

Because making an entire batch of muffins would mean muffin parfaits for DAYS. 

While that isn’t necessarily a bad thing, I certainly like some variety and know from experience that doing such a thing would result in the ultimate (breakfast or snack) burn out. 

How to combat this? Well, time to get creative.

Oh, and to set the timer.

One of my favorite snacks (or lazy light breakfasts) are these healthy single serve blueberry muffins. Not only are they perfect for the singleton like me, they are also ready in under 60 seconds (if you go the microwave route!). In a minute, I had the muffin part of my parfait sorted.

Winning. 

Now let’s talk the yogurt part! Since being back in Australia, my yogurt range has been VERY limited. Saying that, I was introduced to this coconut yogurt, Coyo. Coyo yogurt is based off coconut (as the name suggests) and is suitable for those following a paleo, vegan, gluten free and dairy free yogurt. I found that because of the different nutritional profile of this (higher fat, lower protein), a small portioned balanced the single serve blueberry muffin perfectly. So how about the recipe eyyyy?

This healthy blueberry muffin parfait is filling, delicious and literally takes 5 minutes to whip up! By using a single serve, microwave 1 minute blueberry muffin recipe, you don’t need to whip up an entire batch for it! Unlike traditional yogurt and grain parfaits, this version has NO butter, oil, grains or sugar at all! It’s the perfect option for breakfast, a snack or even a healthy dessert! Because of the ingredients used and coconut yogurt layer, it’s suitable for those following a vegan, gluten free, paleo, dairy free and refined sugar free lifestyle!

HACK! Coconut or non-dairy yogurts can be hard to find to find or a hard flavor to adjust to- If dairy isn’t an issue fo you, I highly recommend a vanilla or plain Greek yogurt- The tartness balances out the naturally sweet muffin beautifully!

This healthy blueberry muffin parfait takes just five minutes to whip up and is the perfect breakfast or healthy dessert/snack choice! A single-serve fluffy blueberry muffin layered between coconut yogurt, it's a gluten-free, vegan, grain free, paleo, refined sugar free and dairy free delight!
Servings: 1

Ingredients  

  • 1 healthy one minute blueberry muffin see link above*
  • 1/2 cup dairy free yogurt of choice I used a coconut yogurt blend
  • Fresh blueberries to garnish

Instructions 

  • Prep your blueberry muffin in either the microwave or oven.
  • Once cooked, divide blueberry muffin in half. Mix half the muffin with 1/4 cup of the yogurt of choice and set aside.
  • Start layering your parfait with 1/4 cup of yogurt, followed by the mixed yogurt/muffin mixture. Top with remaining half of muffin, crumbled. Top with extra blueberries and a dollop of yogurt and enjoy!

Notes

* If dietary restrictions aren't an issue, you can use any blueberry muffin you have on hand.
Parfait can be prepped in advance but enjoyed within 24 hours.

    I love the idea behind this recipe. I almost never bake and besides that I am just not a very skilled baker it’s because I don’t want to eat the baked goods for an entire week every day. So I can totally see me using leftover muffins that way. It also looks really decadent.

    I tried coconut yoghurt a couple of weeks back. It’s new here and it was actually pretty tasty.

  3. Very nice! A few summers ago, I lived off of yogurt parfaits with crumbled up blueberry muffins in them and fruit and peanut butter on top—it had all started when I made a batch of muffins that were too chewy and dense to pass off as muffins but too delicious to throw out. This looks awesome! I might have to revisit this flavor combo. It’s been way too long.

  4. Ah this reminds me of one of my favorite movie quotes of all time. Donkey from Shrek: “You know what everybody likes? Parfaits! Have you ever met a person, you say, “Let’s get some parfait,” they say, “Hell no, I don’t like no parfait.”? Parfaits are delicious! Parfait’s gotta be the most delicious thing on the whole damn planet!”

    Now pass me one of those parfaits before someone gets hurt.

  5. This looks so good! And WHY are brunch appetizers not a thing?!? I would love that. I always want a sampling of a sweet brunch food (waffles, pancakes, etc.), but not as my main meal. If brunch appetizers were everywhere I could have the best of both worlds. We should start a petition.

  6. This reminds me of my obsession with yogurt parfaits back in highschool, except there was cool whip in place of the yogurt and sugary cereal in place of the muffin lol. Needless to say I don’t eat those parfaits anymore for many reasons haha. Time to get back on that train with this muffin masterpiece!

  11. I’ve only had really bad experiences with co-yo because of its drippiness and lack of flavor. BUT, it’s great for drizzling because it’s very thin. Love this!
