These Healthy Brown Rice Pizza muffins are the perfect portable meal or snack! High in protein, gluten free and flourless, they have the taste of pizza with brown rice being the perfect base! All you’ll need is one bowl and 20 minutes!
Jenn, don’t ask but muffins or rice?
“Muffins”
Meg, do you like brown rice?
“They are carbs. Duh! I prefer them over white rice”
So I think I’ve made it a personal goal to create a special recipe for my blogging friends when it’s their birthdays. Some of my personal favourite recipes were created from it like these Single Serve gluten free breakfast cookies and these single serve Banana Smoothie Breakfast bites. Last year, I even pretended to be Meg. By pretending to be Meg, I mean I ate potatoes and cheese with every meal and threw copious amounts of vegetables in there too.
Before you think I’m a cop out collaborating two of my favourite people in one recipe, think again. I had two recipe ideas which suited them both so they get two recipes dedicated to them. So there.
I’ve mentioned on here before but Meg and Jenn are two people who share my love for cheese, eating dessert for breakfast and having a balanced view of food. They are two of the most down to earth, genuine and sassy people I’ve ever met. I may need to reconsider this statement after I gate crash Jenn this year. Meg I already give her the a-ok after we met up last year.
This recipe however is not a surprise to either of them because I complained incessantly to them both about how terrible they are to photograph. TERRIBLE. It almost put me off eating olives forever, but the salad mum served with dinner on Sunday night had a Spanish stuffed version in them so that was no longer possible. Anyway, after some sage advice from Jenn to add some greenery, I feel less embarrassed for share it here today!
Now for this recipe. When I think of Jenn, I think of pizza, cheese and greens. When I think of Meg, I think of pizza, cheese and greens…and now brown rice- Hence the birth of these Healthy Brown Rice Pizza Muffins. One bowl is all you’ll need in your prep to whip these up and they are perfectly customisable to suit your tastebuds! The combination of cheese, eggs and brown rice means you need to flours or grains to hold them in place.
Gluten free and high protein, they make the perfect grab and go breakfast, lunch, dinner or even snack between meals! Confession- They taste amazing at room temperature and cold (and are pictured as such) but when heated, the cheese gets melty and…okay I’ll stop now. Either way, it’s delicious.
Make these Healthy Brown Rice Pizza Muffins in honour of Meg and Jenn…or just for food prep.

Saw the word ‘pizza’ and stopped…didn’t have to read any farther to know that I’ll have to make these sometime. Obsessed with all things pizza!
Hahaha that and bacon screams Mermaid.
Wine? Can I associate that with myself? Or maybe cheesecake? Oh darn, I’m a fitness professional — so let’s change it to almond butter?
Wine and cheesecake can definitely be part of a balanced diet for anyone 🙂
OMGGGG the most delicious food is ugly to photograph. Actually, I always struggle with photographing eggs and I don’t know why. Anywhooooo, these muffins sound delicious and I bet they’re super filling.. WIN.
Lies haha! you’re eggs look amazing!
Give me all the starch!! Loving this recipe and basically every recipe I’ve ever seen on your blog. I’d like a week off of work to just cook all of them.
Cheers! Hope you enjoy it!
Food associated with me? Probably meat! Yep, all the meat! haha! or eggs, I eat them everyday!
Oh nice! Eggs are delicious!
I want a pizza brown rice sushi roll.
When it’s your birthday, I’m eating kraft singles and bread. the most un strange food ever.
Pizza anything is a winner in my book! A food associated with me? Hmm, probably pizza actually. I eat it at least once a week, so I guess that would be it!
Lies. WINE. WINE. WINE. WINE.
Sometimes bread.
Haha this reminds me of every time I go to photograph the most delicious bowl of oatmeal and it ends up looking like a bowl of crap…literally. My aunt told me over Thanksgiving dinner that one of my oatmeal photos looked like crap haha. Oh well it’s delicious!
OLIVES. Yuck. I was traumatized as a child (I thought they were blueberries and ate a huge handful……….). So I guess you can say that no, that would not be a food associated with me haha.
Back in the day I would be associated with Diet Snapple. I had about four or five a day. Nowadays I eat wayyyy too much of a variety to be pinned down. I’m a bit of a loose cannon.
LOL. What a lovely aunty.
I use to hate olives too but have grown to really love them- Depending on the colour and style!
Oh I tried a diet snapple- The one that was produced on the Celebrity Apprentice lol!
I love the idea of eating rice in muffin form (kind of like how I LOVE onigiri – rice should be dense, not granular IMO).
The food most associated with me… I want to claim eggs but that’s like claiming chocolate – someone else will beat me to it. SARDINES. Can I have sardines? I’m a cat and all that…
Love sardines…Just ate them for dinner 😉
This relates to your post 0%. But, I just figured out your celebrity twin!! Enrique Iglesias. Like dead on. And I used to have a poster of Anna Kournikova in my dorm room. …on my ceiling. Don’t judge me. Anyways, there’s your totally useless random info for the day.
LOL. Is it because I have that heinous spot on my face :p
PS- Looks like we’re doing a crossfit workout together this year 😉
LOVE this idea Arman! Never thought to make a muffin outta rice. I bet it’d be good too using a sweet variation like coconut rice pudding muffins. or something
YES. I tried that but put too much coconut cream (which was done on purpose). 😉
Not gonna lie, when I opened your blog post and read the title, I mouthed, “What the F#*K is this?” Food associated with me: avocados, PB, hummus & donuts.
These are cute! Sorry, but they are. I love the flavor profile.
How dare you call them cute 😉
I puffy heart you, especially because there are not one, not two, but three different kinds of cheeses in this recipe. Be still my cheese loving heart. Thank you sunshine! I can’t wait to try these…off to make some rice.
Please ignore the bracketed suggestions. Those aren’t for your eyes 😉
Ok, I am sorry if this is getting really old, but I think my connectings are chicken and eggs?
I love muffins cause I can just put them in my handbag. I mean, salad and stuff is just so complicated to transport (let alone the view of dressing all over the place).
WHAT is this NEWS???And when do you arrive in Switzerland??
oh i know, I know!! hehe. and i’m pumped for Arman. He will spill the beans tomorrow…. but for now, let’s drool over these muffins. and do i spy jalapeños?
No they were olives 🙁
BUT jalapeños would be an amazing and necessary addition!
True…actually seafood comes a very close second.
I need to see the egg hidden in you!
