This secretly healthy recipe marries two of everyone’s favourite foods- Pizza and pancakes. Within groups of friends, there are also mini groups within that. It might be because you all share a weekly workout class or it might be because you all love reading and can branch off and gossip about 50 Shades Of crap Gray or something more substantial like Harry Potter. For others- It’s cheese

Let’s take said group of friends and call them ‘The Healthy Living/Food Blogger Community‘. Within that, you’ll have those who love desserts, those who love all things fruit, then some who love all things cheese. Lot’s of cheese.

What started as an innocent Instagram group tag of an epic cheese sandwich many months ago paved the way for a new trend moving forward. Jenn (Peas and Crayons), Heather (Kiss My Broccoli), Laura (Sprint 2 the Table) and of course, the Queen of Dairy herself, Meg (Clean Eats Fast Feets) and myself have all formed a bond over this form of edible gold.

It’s not uncommon to open up my Instagtam feed to see some new finding whether that be a deep dish Chicago Pizza were the cheese to pizza ratio is 10000 : 1; A grilled cheese sandwich which combines three distinct cheeses or an epic block of flavoured cheese which is flavoured with, well, more cheese. 

After remaking my sweet potato and cheddar pancakes the other day, I decided to not wash the pan and put away the ingredients but experiment a little bit more to come up with a pizza in pancake form. A HEALTHY pizza in pancake form. A HEALTHY pizza in pancake form WITHOUT sacrificing taste. The main thing though- The pancake batter had to resemble a pizza dough.

I’m a huge fan of thin crispy based pizzas so that was the direction I was going for.

The biggest downfall?

THIN CRISPY STYLE PANCAKES DO NOT PHOTOGRAPH WELL AT ALL. 

You guys, no matter how many times I tried to make it look good, it just couldn’t. These aren’t your fluffy, pillow like pancakes because deep dishing it was not what I was after. Regardless, they are delicious and that’s all that matters.

These Healthy Four Cheese Pizza Pancakes are filling and crispy around the edges just like your favourite thin crust pizza. The four cheeses used are- Cottage cheese (more as a binder), a blend of cheddar and mozzarella (mixed through the batter) and coated lightly with parmesan. If plain cheese is what you’re after, simply add the dash of tomato sauce and the spices and you’re good to start flipping. Myself, I love some onion, bacon and chopped tomatoes so added those too. 

Want some spice? Add Jalapeños.

Want to go the Hawaiian route? Add pineapple chunks and shredded ham.

Want to go vegetable crazy? Go to town.

Just promise me you won’t skimp out on the cheese.

These pancakes are healthy because whilst it uses four cheeses, you don’t go overboard on it. Furthermore, it’s a great excuse to hide some extra vegetables in it. I used a gluten free oat flour blend which worked great, but use whatever flour you have on hand, except coconut or almond flour- Let’s keep that to the sweet style ones for now!

Ingredients
  1. 1 cup gluten free oat flour (can sub for standard white, wholewheat)
  2. 1/4 tsp sea salt
  3. 1 T Italian mixed herbs
  4. 1 large egg, lightly whisked
  5. 1/2 cup cottage cheese, blended*
  6. 1/2 cup milk of choice
  7. 1/2 cup Mozzarella cheese
  8. 1/2 cup sharp cheddar cheese
  9. 2 T sharp parmesan cheese
  10. 2 T tomato sauce
  11. Add ins of choice (I used 1/4 cup diced onions, diced bacon and a chopped tomato)
  12. Red pepper flakes (optional)
  13. Extra basil for sprinkling
  14. Cooking oil/spray
Instructions
  1. In a large mixing bowl, add the flour, sea salt, mixed herbs and stir until combined.
  2. Add the egg, blended cottage cheese and milk and mix very well until a thick batter has formed.
  3. Stir through the mozzarella cheese, cheddar cheese, tomato sauce and any add ins of choice and mix until fully incorporated.
  4. Heat a large frying pan on low heat and coat with oil/cooking spray. Once searing hot, pour batter 1/4 cup at a time and add a dash of parmesan cheese to it. Spread the batter out and cover immediately. Once bubbles start to appear on the edges, flip and cover once more. Remove once golden on top. Repeat the process until all the batter is used up.
  5. Serve immediately with marinara sauce and a sprinkling of basil on top.
Notes
  1. I would recommend blending the cottage cheese purely for removing the lumps (Australian brands are mostly like this).
  2. The more 'add ins' you choose, the thinner the base will be.
  3. These pancakes can be cooled and frozen. If reheating from frozen, it's best to do so over the pan.

  2. Gah Arman look at all that gorgeous cheese! These are definitely worth the post-lactose consumption repercussion!! Love that these are thin crust- just like my favourite kind of pizza. As for toppings, a few which I almost always try to add are sweetcorn, mushrooms & sweet peppers…and loads of tabasco! And just for the record: 50 Shades > Harry Potter !!

  3. So I try to eat paleo pretty much all the time. Thanks for making that a million times harder now that I know these exist. Haha, in all seriousness- yum! After I get some cheese from the ‘cheese farmer’ that visits us, I think I’ll give them a try, paleo or not. I’m sure my hubby and kid would love them, too 😉

  4. Thin crispy crust but fluffy pancakes. I make a similar flavor profile of savory pancakes but my version has the sauce and cheese on top. They’re actually really good!

  5. I’m not even sure that your mind is human anymore. Like you know how much i love pancakes, and one could never have imagined that i would transition into SAVORY PANCAKES!? (Wait backtrack.. you mentioned fruit/cheese/dessert, but what about nut butter groupies? okay maybe that’s just me. sidenote: when people say “omg nut butter problems” and photograph their 4 jar collection.. makes me want to barf. BUT MOVING ON
    I feel like this would work gloriously with a flax egg, sooo this will give me another reason to make pancakes twice in a day. totally might need to try this this weekend after i go grocery shopping and buy MO CHEESE.
    P.S. I expect voluminous amounts of “ew” comments from you if i can get these flat babies to photograph :D:D:D

  6. What a creative recipe!! This would make a great brunch dish!
    Being from Chicago, I am tempted to say that deep dish is the way to go… but I DO love the crispy crust of thin crust!!! The buttery crust of the deep dish is what keeps me going back…

  7. What kind of evil (uh, I mean genius) mind would come up with pizza pancakes? Seriously…this is one of the best ideas ever, mate! I am most solidly on Team Crispy Crust, although I can still enjoy a deep dish from time to time. And as far as toppings? We tried diced jalapenos a couple of years ago, and now I can’t go back to pizza without it. Am I allowed to add jalapenos to these pancakes? Because now I really want pizza pancakes with my morning coffee!

  11. As if you’d meant to respond to my current cheese cravings. It’s weird: I like cheese but can usually go without and hardly have any at hand because I wouldn’t go through it fast enough. These past days, though? No lunch without some melty cheese action. I don’t know what this means but it’s delicious and that’s all that matters. Four kinds of cheese in these?! More than I’d ever have around but wow, they sound good.
    I’m a proud member of the nut butter bunch – like every blogger. And then there’s oatmeal though I’m part of the oat bran club. Basically the cooler sub-clique 😉 .

  12. I’m cuddled up in my lair here in Chicago and FEEL like I should say deep dish, but….please don’t give me bad karma for this Illinois….I’m a crispy crust person! Like frozen pizzas….OH MOMMA. These pancakes look like the PERFECT bread replacement for a sammich. Two of these with smoked ham in the middle would be tangible heaven.

      1. Bahaha, please come sit on Grandpa Eva’s lap and let her tell you about rent in Chicago! It’s absolutely impossible to get a studio apartment here for under $725, but I miraculously got a referral from my mom’s friend’s brother and got my studio in one of the nicer areas of Chi-town for $625. Sure, I still stand there and watch fights at the grocery store, we have Gang Watch in the ‘hood, and my studio had it’s fair share of cockroaches and mice, but it’s seriously not bad for the $1,000 price tag that most apartments go for. If you’re looking for a vacation house/apartment here, I just say come and live with me haha.

        And I propose a toast to toasting!

          1. There are, actually! I’m not too familiar about the ones in the inner city, but I know in downtown Chicago that they cost about $1700 for the absolute cheapest. Not bad considering you get the whole shebang and get to live in the convenience of every tourist attraction ever! And don’t be sorry about the random questions; I should just give you my email haha! Mainly because I want to gossip and share secrets.

    I’d be a part of the foodie clique that loves nut butter, but…that’s not really a clique as much as it is the whole entire healthy living WORLD.
    Deep dish and thin crust are appropriate depending on my mood, but I’d say crispy and thin wins. You can basically put anything on a pizza and I’d eat it. BBQ Chicken, Hawaiian, classic Margherita, pesto… Or all of it all at the same time.
