Healthy No Bake Peanut Butter Cookies

No bake cookies are a stand-by recipe everyone should have on hand. It’s quick, easy, simple and needs a handful of ingredients. You can easily satisfy a sweet tooth craving.

Sometimes, we just want a healthy cookie without the temptation of multiple cookies. I adapted my 3 ingredient peanut butter no bake cookie recipe and gave it a single serving makeover- No sharing necessary!

You guys have been asking for keto no bake cookies without shredded coconut, so I am here to deliver. Shredded coconut, while delicious, can sometimes be cumbersome to work with. Not only that, these no bake peanut butter cookies are made with no sugar and no oatmeal. 

So what are these cookies made of? Well, it’s a simple combination of coconut flour, a sticky sweetener of choice and of course, peanut butter.

Are peanuts allowed on a ketogenic diet? 

If you follow a ketogenic diet but NOT a paleo diet, peanuts are allowed in moderation. They are a little bit higher in carbs than other nuts or seeds, so just be wary of your serving sizes.

I believe peanuts and peanut butter recipes are good for a keto diet because it’s a food that is difficult to go overboard on. 

Based on my own recipes, there is only a small portion in each serving and when combined with other ingredients, provided a balanced, keto-friendly dessert or snack. 

Is peanut butter okay on a low carb diet?

Nutritionally speaking, peanut butter would be a fantastic food to include as part of a low carb diet. Barring peanut or nut allergies, they are packed with protein and very trace net carbs. Peanut butter is high in healthy fats, but as with any foods, moderation is key.

How to make no bake cookies without peanut butter

As the title suggests, this recipe is for no bake low carb peanut butter cookies. However, it is an easy swap and one which works with other nut or seed butter.

Simply use equal amounts of almond butter or cashew butter, or use sunflower seed butter to keep it nut-free. Ensure that the nut/seed butter you use is of the smooth, drippy kind, or it will be difficult to work with. 

Single Serve or Small Batch

This recipe doesn’t need to be single serving- I’ve included notes to make small batch cookies. You can freeze the leftovers as they thaw out beautifully, for a quick grab and go snacks or desserts. 

Alternatives to Coconut Flour

I’m often asked if almond flour and coconut flour interchangeable in my recipes. Unfortunately, coconut flour is unique, in which it absorbs liquids/sticky sweeteners like a sponge. It is not possible to replace it with the exact same measurements.

With that said, this recipe CAN use almond flour instead of coconut flour. Just be sure to use twice as much almond flour, and adjust the peanut butter a little bit- You may need a tablespoon MORE if the batter is too thick and crumbly.

Ingredients  

Instructions 

  • In a small mixing bowl, combine your peanut butter with sticky sweetener of choice and mix well. If too stiff, melt in a microwave or stovetop. 
  • Add your coconut flour and mix very well. If the batter is too thin, add more coconut flour. If the batter is too thick, add some liquid (water, milk etc) to form into a thick dough.
  • Roll the cookie dough into a ball and place on a lined plate. Press into a cookie shape, top with optional chocolate chips and refrigerate until firm. 

Notes

* For a keto-friendly sticky sweetener, I used a monk fruit sweetened maple syrup. Refined sugar free sticky sweeteners include pure maple syrup and agave nectar. 
3 Ingredient Low Carb Keto Peanut Butter Cookies (Paleo, Vegan) should be kept refrigerated and is freezer friendly. 
To make a small batch, use 2 cups peanut butter, 3/4 cup coconut flour and 1/2 cup sticky sweetener of choice.

  1. do ANY of your keto recipes not use liquid sweetener?
    i used high-concentration pure stevia (powdered, typically) – Can I use that instead of what you’re using here? Do you think the cookie would stick together regardless?

  2. Mine did not turn out this way at all. It just was a pile of sunbutter 🙁 What did I do wrong?
    I actually threw the recipe away since I have better cookie recipes. So disappointing.
