How you take my (already lacking) masculinity away from me even further. 

When I first made this recipe, it looked like plain, pale coloured cookies. Delicious, but had I shown you them, you’d never have guessed they tasted like vanilla cake batter

Let’s use real life examples here. 

My friend Lauren- 

“How do you know your soft serve is vanilla flavoured?”

“Because it’s white. It also MUST have sprinkles”

My friend Luke- 

“How do you know your cake is vanilla flavoured?”

“Because I bought it and it said vanilla on it. It also has sprinkles”

My sister-

“How would you know those muffins are vanilla flavoured?”

“I like chocolate muffins.”

 To distinguish these breakfast cookies as vanilla, I needed to add sprinkles. So be it. I’m fine with that, as long as you don’t make comments like “It’s great seeing little Indian girls who blog.” That still stings. I also still need to get a hair cut. 

Back to this recipe. As mentioned last week, I’m going to (try to!) share one no bake single serve cookie or breakfast cookie dough recipe a week. I asked on Facebook two weeks ago between this recipe and today’s and the former was clearly victorious. I recently put forth the same question pitting today’s recipe versus a spin on this healthy apple and cinnamon rice pudding, and voila- You ask, I deliver (virtually). 

Let’s talk about these  healthy No Bake Vanilla Cake Batter Breakfast Cookies. These have the taste and texture of cake batter (just like my all time favourite oatmeal) minus the usual ingredients- Butter, flour, sugar and raw eggs. Like all my other no bake recipes, these have a healthy makeover- Without sacrificing on taste! They are high in protein, sugar free (if you omit the sprinkles which I completely support!), gluten free and vegan. They take 10 minutes to whip up, or less than 8 (if you omit the sprinkles which I once again, completely support). This is also single serving and make at least three, giant cookies so no excuses for being unsatisfied here.

Confession- While they can be eaten in cookie form, I love adding an extra bit more milk to make it like an actual thick batter and just eat it with a spoon. Sue me. (Please don’t)

No Bake Vanilla Cake Batter Breakfast Cookies

Ingredients

  • 1/4 cup gluten free oat bran
  • 1/4 cup gluten free oat flour gluten free rolled oats ground to a flour
  • 1 scoop vanilla flavoured protein powder*
  • 1-2 T sweetener of choice**
  • 2 T mild tasting nut butter of choice I used cashew butter and coconut butter
  • pinch sea salt
  • 1/4 tsp vanilla essence/extract
  • 1/4-1/2 cup dairy free milk of choice I used unsweetened vanilla almond milk***
  • Sprinkles optional

Instructions

  • Line a large plate with baking paper and set aside.
  • In a large mixing bowl, combine the oat bran, oat flour, protein powder, sea salt and mix well. Add the nut butter of choice and mix through until the batter is very crumbly.
  • Add the vanilla extract/essence and using a tablespoon, add the milk of choice until a very thick batter is formed. Stir through sprinkles and form into three to four large balls and place on the lined plate. Press firmly into a cookie shape and top with extra sprinkles.
  • Eat immediately or for a firmer cookie (and ones which can be portable and left at room temperature), refrigerate or freeze for at least 30 minutes.

Notes

* If you use an unflavoured protein powder, up the vanilla essence to 1/2 teaspoon and ensure you add the sweetener of choice
** If you're protein powder isn't overly sweet or you want a very sweet cookie, add the sweetener of choice.
*** Depending on the protein powder you use, you may need more or less liquid. Different vegan blends react differently.
If not strictly vegan, I'd recommend using a casein or blended protein powder
Cookies can be kept at room temperature

  2. I should probably be shunned- I actually never have liked sprinkles! Don’t get me wrong though, every year during the classic Christmas cookie decorating I load those babies up with so many sprinkles that they end up burning! All in the name for color, I say.

  3. Not going to lie- I usually hate sprinkles but this post has changed my mind…never have food pictures made me smile so much but the sprinkles did the trick for this post! Vanilla is my go-to ice cream flavour and while I’m okay to eat it on its own, I would definitely not turn down toppings like crushed Oreos, Smarties, cookie dough bits, Reeses Pieces & flaked almonds. Thanks Arman, now I’m craving a bowl of ice cream despite the fact that I’m sitting next to a radiator!!

  4. Is it weird if I’ve never been a big sprinkle fan? Sure they look good, but the flavor is nonexistent so I always went for things like chocolate chips or peanut butter clusters. Either way, these DO look fancy with the colorful specks on top so I support the decision. They look delicious and I would eat all six. I mean three….double batch?
