One bowl and ten minutes is all you’ll need to have dessert for breakfast- With a healthy makeover! These No Bake Protein Packed Vanilla Cake Batter Breakfast cookies are single serving, gluten, sugar and dairy free with a vegan option too!
Oh sprinkles.
How you take my (already lacking) masculinity away from me even further.
When I first made this recipe, it looked like plain, pale coloured cookies. Delicious, but had I shown you them, you’d never have guessed they tasted like vanilla cake batter.
Let’s use real life examples here.
My friend Lauren-
“How do you know your soft serve is vanilla flavoured?”
“Because it’s white. It also MUST have sprinkles”
My friend Luke-
“How do you know your cake is vanilla flavoured?”
“Because I bought it and it said vanilla on it. It also has sprinkles”
My sister-
“How would you know those muffins are vanilla flavoured?”
“I like chocolate muffins.”
Thanks Niki. You’ve once again proved to be as useful as decaffeinated coffee.
To distinguish these breakfast cookies as vanilla, I needed to add sprinkles. So be it. I’m fine with that, as long as you don’t make comments like “It’s great seeing little Indian girls who blog.” That still stings. I also still need to get a hair cut.
Back to this recipe. As mentioned last week, I’m going to (try to!) share one no bake single serve cookie or breakfast cookie dough recipe a week. I asked on Facebook two weeks ago between this recipe and today’s and the former was clearly victorious. I recently put forth the same question pitting today’s recipe versus a spin on this healthy apple and cinnamon rice pudding, and voila- You ask, I deliver (virtually).
Let’s talk about these healthy No Bake Vanilla Cake Batter Breakfast Cookies. These have the taste and texture of cake batter (just like my all time favourite oatmeal) minus the usual ingredients- Butter, flour, sugar and raw eggs. Like all my other no bake recipes, these have a healthy makeover- Without sacrificing on taste! They are high in protein, sugar free (if you omit the sprinkles which I completely support!), gluten free and vegan. They take 10 minutes to whip up, or less than 8 (if you omit the sprinkles which I once again, completely support). This is also single serving and make at least three, giant cookies so no excuses for being unsatisfied here.
Confession- While they can be eaten in cookie form, I love adding an extra bit more milk to make it like an actual thick batter and just eat it with a spoon. Sue me. (Please don’t).
Whether you want it in batter form or cookie form- I won’t judge. Make these healthy No Bake Vanilla Cake Batter Breakfast Cookies and start your morning off like you’re eating dessert…Healthy style.

- Eat immediately or for a firmer cookie (and ones which can be portable and left at room temperature), refrigerate or freeze for at least 30 minutes.
Notes
** If you're protein powder isn't overly sweet or you want a very sweet cookie, add the sweetener of choice.
*** Depending on the protein powder you use, you may need more or less liquid. Different vegan blends react differently.
If not strictly vegan, I'd recommend using a casein or blended protein powder
Cookies can be kept at room temperature

Sprinkles = for the people! These look both so yummy and so pretty 🙂
Thanks heaps, Jess!
Is it weird if I’ve never been a big sprinkle fan? Sure they look good, but the flavor is nonexistent so I always went for things like chocolate chips or peanut butter clusters. Either way, these DO look fancy with the colorful specks on top so I support the decision. They look delicious and I would eat all six. I mean three….double batch?
Double batch is ALWAYS acceptable. ALWAYS.
Ok first of all, I lol’d at your sister’s example. Second of all, these sound so good! With those ingredients I’m sure the texture is amazing. I mostly associate vanilla cake with happy Les, however sprinkles are usually involved as well.
She’s such a twat. I asked her for a recipe idea just before and she said oreos. From a packet.
Anything cake batter, sign me up.
Consider yourself signed up 🙂
Don’t tell Sam about your dislike of sprinkles … I’m right there with you on the idea of eating this as a dough versus taking the time to shape cookies. Because everybody knows that unbaked/shaped dough tastes better than actual cookies. Fact.
Very true! I think breakfast is sorted tomorrow… 😉
I am finally feeling well enough to appreciate!!!! OMG!!!!!!!!!!!!!!!!!!!!!! YUMMMMMMMM!
Thanks Jody!
I put sprinkles on just about everything, (sweet, that is) so I can’t say that I associate it just with vanilla. Funfetti, sure, But Funfetti is it’s own thing all together. I mostly just associate vanilla with white. Which could be racist sounding? Whatever.
lol funfetti is such a funny word.
Are you being racist on my blog? How dare you.
I never thought of putting protien powder in my breakfast cookies – what a great idea!
Definitely try it out, Ally!
Sprinkles do make everything better, that’s the truth! These look like a very fun breakfast!
How dare you say that, Kelly 😉
Thanks friend!
Don’t hate me, but I’ve never been a fan of the colorful sprinkles. Would it be okay if I just add some vegan mini chocolate chips? 🙂 Anyway, these look great, and they’re pretty healthy. A win-win!
Um… I would like you even more! Colourful sprinkles are blergh 😉
Cake is my lyfeeeeeee. And actually i want to eat everything with a spoon (actually scratch that) if i’m supposed to eat it with my hands i want utensils and if i’m supposed to be classy and use silverware, i use my face. but i definitely foresee plate-lickage to get the remnants of fallen pink sprinkles. actually when i was little i ordered my ice cream with EXTRA EXTRA sprinkles.. sometimes hold the ice cream. i was actually given a tub of jimmes (thats what we call them) for my 9th birthday.. YUP
Hahahaha story of my life.
….I need to google jimmes.
I’m nit usually a sprinkle person, but in cake batter they are a must! love this easy no-bake breakfast idea
Thanks so much, Heather! Craving a certain frozen yogurt-eque snack right now!
The only way I will eat ice cream is if it has sprinkles on it. There is no discussion. So that would also be my favorite ice cream topping 🙂 I absolutely loath maraschino cherries though. They should not be on ice cream, only in Shirley Temples.
Mmm there’s a place I’m going to check out in New York which has basic vanilla soft serve with sprinkles!
vanilla AND pink sprinkles?!? mine Mine MIIIIIINE! I need.
Are you calling me Vanilla? Are you being racist?
That’s okay I can be yours. Oh and the cookies too.
you are anything but vanilla, my friend.
NOT THAT THERE’S ANYTHING WRONG WITH VANILLA. ahem.
