Why? Hear me out.

After posting my Copycat White Chocolate Macadamia Nut Cookies last year, a huge request I’ve had is to make a paleo friendly version. Now, paleo cookies are something I enjoy making and often do because once the proportions are right- Is quite simple.

NOT THESE COOKIES. Just ask Niki. 

Prior to coming to America, I spent time making a mess in my mum’s kitchen (seriously, son of the year right here) trying to create the perfect chewy paleo friendly white chocolate macadamia nut cookie. It wasn’t so much the ‘baking’ aspect which held me back, but the darn white chocolate portion of it. 

I used the paleo and vegan friendly white chocolate chip recipe mentioned here and when baked…It was a disaster.

I’m not sure whom in the description mentioned success with baking with them but either they had a magic oven or I’m missing something. When I tried baking with them, it looked like I had created cookies with candle wax over them. In fact, Niki went as far to stick an actual candle in it as a joke. 

Not funny.

After reading through the comment section again, I tried once more by adding more chips thinking it would be the solution. 

You guys, I created a white chocolate version of Niagara Falls. I opened the oven and saw white chocolate drizzling down to the various tiers within. Even worse, mum said ‘remove the other trays and tiers in the oven before using it.’

Baked cookies- 2. Arman – 0. 

I was not wasting any more time or ingredients with them. There is a reason why Subway has nothing gluten free or paleo on their sweet menu. The solution? Do what I (seem) to do best- Create it ‘no bake’ style. BOOM. Snap. Crackle. Pop. #ovensbegone

These No Bake White Chocolate Macadamia Nut Cookies are my ‘stuff you’ to the silly oven. They are soft, chewy and have the texture of soft baked cookie. The best part? They are so healthy for you and suit most dietary lifestyles! They take 1 bowl and 10 minutes to whip so timing is not an excuse. Chock full of homemade white chocolate chunks and macadamia nuts, they have a protein option for those who enjoy adding protein powder to their snacks (Perfect for a pre or post workout snack!). They are also paleo, vegan, gluten free, dairy free and refined sugar free- So much that you can have a small batch for breakfast!

I’ve had consistent requests to share the ingredients I use in my recipes. I don’t have the recipe plugin which allows direct links so I’m going to start including the main ones here. This is my preferred coconut flour because of the milder taste. I made my own macadamia nut butter but this blended nut butter works great. The same brand’s cashew butter and almond butter is amazing! For those not paleo, this is my preferred oat flour when I’m too lazy to make my own. If using a gluten free blend, this is my recommendation by Gluten Free Mama.

No Bake White Chocolate Macadamia Nut Cookies

Healthy No Bake White Chocolate Macadamia Nut Cookies- Inspired by Subway's infamous cookies, these healthy white chocolate macadamia nut cookies are fudgy, chewy and require no baking at all! 1 bowl and 10 minutes is all you'll need to whip these beauties up which are paleo, vegan, gluten free, dairy free AND come with a high protein option!

Ingredients  

  • 1 cup coconut flour sifted*
  • 1/4 cup granulated sweetener of choice I used coconut palm sugar
  • 2 scoops of vanilla protein powder optional
  • pinch sea salt
  • pinch cinnamon
  • 1/4 cup macadamia nut butter Can sub for cashew or almond
  • 1/2 cup+ dairy free milk of choice**
  • 1/4 teaspoon vanilla extract
  • 1/4 cup homemade dairy free white chocolate chips
  • 2 tablespoon macadamia nuts

Instructions 

  • Line a large plate with baking paper and set aside.
  • In a large mixing bowl, combine the sifted coconut flour with the granulated sweetener, protein powder (if using it), sea salt, cinnamon and mix well.
  • Stir through the nut butter of choice- The mixture should be very crumbly.
  • Add 1/2 cup of dairy free milk and mix well. Mixture should still be crumbly. Using a tablespoon at a time, add more dairy free milk until a thick batter is formed.
  • Stir through the white chocolate chips and macadamia nuts then using your hands, form into small bite sized balls and press firmly onto the lined plate and press to a cookie shape.
  • Freeze for 10 minutes or refrigerate for 30 minutes until firm.

Notes

* For non paleo, you can sub for a full cup of gluten free oat flour, oat bran or rolled oats however liquids need to be adjusted considerably- You'll need close to 1/2 cup tops (depending on if you use protein powder or not).
** Coconut flour brands differ. Depending on that, and also if you use protein powder or not, you may need significantly more dairy free milk.
Cookies can be left at room temperature but will be soft and fudge like. For firmer cookies, keep refrigerated.

  3. Arman, these look like big fluffy pillows of deliciousness that I’d like to fall asleep on and take big bites out of all at the same time. I obviously haven’t tasted them yet but they look pretty son-of-the-year worthy to me. I have had many kitchen disasters, including burning countless trays of kale chips and attempting a twist on lemon chicken that my sister claimed tasted “a bit like a cleaning product.” I’m much better at savoury recipes than I am sweet ones, but if I baked more often, I’m sure I’d have far more kitchen disaster tales to tell!

      Angela, yesterday I tried making cookies and and forgot the conversions in America differs from America and my cookies turned into kale chips. Burnt kale chips.

I’m fairly certain I could eat an entire tray of these right about now. Pass those no-bake beauties right on over my direction! But whatever you do, stay away from my oven…just kidding, mate!

  5. The last oven disaster I had was like 5 years ago – an entire pizza slipped when I was taking it out of the oven and the cheese was everywhere! For months after cleaning it, randomly I would find burned cheese pizza bits flying out of the oven or under the oven. awful!

  8. Arman- I thought of you so much the other night. After a night full of drinking, I may or may not have ventured into a Subway to pick up a cookie..definitely hit the spot at that time of the night! If ever I needed an excuse to come visit you in the Big Apple, these cookies did the trick!

  11. My last kitchen disaster was when I was sautéing onions and fell asleep. My pan was black and the guy who lives down the hall wrote me the kindest note saying how sorry he was my pan was ruined but the smoke was so bad he threw everything OUT THE WINDOW. He ended the note saying “No harm, no foul”
    What a champ! I should never leave this place!
