 It’s funny how in one culture a certain food eaten at a certain time is considered preposterous. 

Last week, I mentioned how my grandma in Iran would have the same breakfast of Persian flatbread with feta cheese and butter. This Persian flatbread is a fine milled, stone oven baked bread which is a blend of wholewheat and white flours. That’s it. No options.

A few weeks ago, I was enjoying breakfast with my grandma and suggested she stray away from her usual flatbread (well, Australia’s poor excuse for it) and try some cinnamon raisin bread with butter. I rarely buy this bread because it really lacks any cinnamon flavour and has like, FIVE raisins in the whole loaf. However, as I was at mum’s, her fridge = My fridge. (Please note- This statement was self proclaimed)

You guys, you should have seen the look my grandma gave me! It’s as though I asked her to cut carbs for a day. She then proceeded to tell me that dessert for breakfast is unacceptable. Oh man, if only she’s seen what some of my more typical breakfasts look like…Like brownies and chicken. Anyway, she refused and said she would enjoy a slice in the afternoon at a more acceptable hour. I told her it was afternoon somewhere in the world and then she told me to respect my elders. 

Lesson learnt. 

I made this paleo cinnamon raisin flatbread after having success with the original version. As mentioned in that post, this ‘flatbread’ is NOT like a slice of cafe style raisin bread you may or may not be accustomed to. It is more of a ‘wrap’ texture and depending on whether you choose to use whole eggs or just the whites, can be quite airy. Saying that, it is still delicious lightly toasted with butter or as I did during my Paleo challenge, use it as the most delicious wrap I think I have ever made! (Recipe to come- It’s a good one, guys!).

The ingredient list has an almost identical base to the original flatbread but this time, the addition of cinnamon, raisins and the optional coconut sugar. This was without a doubt the best part- No need to be scouting out the slice which has all the raisins in it- You be the judge. In just five minutes, you’ve got a bread like base ready for the butter, the fillings or even as it is. 

Breakfast, lunch, snack or dinner- You be the judge. This four ingredient Paleo Cinnamon Raisin flatbread doesn’t discriminate. 

Just don’t tell my grandma. Although my mum was the one who used to chase me with a wooden spoon– She had to learn it from somewhere!

Ingredients

  • 1/4 cup coconut flour sifted
  • 2 tsp homemade paleo Baking Powder use standard if not strictly paleo*
  • 12 whole eggs/12 egg whites not from a carton
  • 1 tsp sea salt
  • 2 T - 1/4 cup coconut sugar Can sub for any granulated sweetener
  • 1 T cinnamon
  • 1/4 cup+ raisins
  • Coconut oil cooking spray

Instructions

  • In a large mixing bowl, combine the eggs and whisk lightly. Add the coconut flour, baking powder, salt, coconut sugar, cinnamon and whisk immediately to avoid clumping. Fold in the raisins and set aside.
  • Coat a large frying pan with oil and on low heat, allow to heat up completely. Once hot, pour 1/4 of the mixture into the pan and cover immediately. Once bubbles start to appear on the edges, remove cover and flip and cook for 1-2 minutes. Repeat the process until you have four, large flatbreads.
  • Allow to cool completely before using as a wrap, or top immediately with butter and extra cinnamon.

Notes

aking soda and lemon juice- for this recipe use 1/2 tsp baking soda with 1 T lemon juice.
Flatbreads can be refrigerated for up to a week. Freezing them is not recommended, unless you heat them up again in the pan.

    1. Your grandmother sounds adorable…and hilarious! While I used to associate certain foods with breakfast, that went out the window when I did Whole30. After a few days of eating chicken for breakfast, anything goes now! Lately I’ve been on a smoothie kick- it’s the only thing that sounds good to me when I wake up so I’m just rolling with it!

      You didn’t finish your story- did your grandma enjoy the flatbread (when she eventually ate it)??

    5. Cravings. Serious raisin bread cravings right here because this looks so good. And the funniest part is I claim not liking raisins much. Though … I’ve always been a HUGE fan of “Rosinenbrötchen” and yes – shock your grandma 😉 – they were part of breakfast. If you’d tried to sell me one of those as dessert I’d have probably chased you with a shoe [essentially my mum’s version of the wooden spoon].

    7. These look great! What is the difference when you use 12 whole eggs or egg whites. Also, can you do 6 whole eggs/6 egg whites? Thank you for all of these recipes!

      1. Hey Catherine! If you use full eggs, I found them to be more dense than fluffy which made it harder to wrap- then again, my sister loved it that way, she put it in the toaster!
