American football….Starts with an ‘A’

Safe to say, this Aussie over here is completely clueless when it comes to American football. Before you scoff at me thinking it’s because I’m a new transplant here, think again. I am completely clueless when it comes to sport back when I was in Australia. My friends were probably embarrassed by my lack of knowledge of basic sports facts….like how the A in AFL (Australian Football League) stood for Australian.

FACT.

In 2010, my mates asked me to go to an NBA game (Winter time) for them when I was over here. I did….and left after 20 minutes after taking photos and buying a personal pan pizza.

FACT.

In 2012, my mates asked me to go to a Baseball game (Summer time) when I was over here. I did….and left after 20 minutes after taking a photo of the Yankee Stadium, buying a NYC cap and of course, a hot dog. 

Need any more proof of my usefulness when it comes to sport?

Didn’t think so.

What I DO know about American football is the food that is associated with it. I used to read blogs last year with envy at their various parties and those epic snacks they had on board. Mini hot dogs, sliders, candy coated nuts, salted nuts and well, NUTS

When my friends at Blue Diamond suggested the idea that nuts could be THE game day snack, I couldn’t agree more. I’d take nuts over the game other typical snacks any day- Especially with their two epic flavors, Wasabi and Soy Sauce and Smokehouse almonds. Instead of showcasing some delicious combinations which these nuts could be used with, I thought I’d share one of my favorite hacks using the humble almond which takes barely any time and gives all of you with a sweet tooth something to dance to- Stovetop Sugar Free Caramelized Almonds!

While the salty snacks tend to take centre stage during gatherings and parties, it’s time for those who can’t tame their sweet tooth to have some fun on the action. For the recipe, I used Blue Diamond’s Smokehouse almonds and gave it my ‘sugar free caramelization’ treatment. Because they were so flavorful and I didn’t want to detract from the smokey flavor, I cut back on the sweetness from my original recipe. These sugar free caramelised almonds use granulated monk fruit instead of white sugar, table sugar or any artificial sweetener. It gives just the right amount of sweetness without taking over the smokey flavor. It’s also naturally paleo, gluten free and vegan. 

HACK! These can also be made in the oven if you’d prefer that over the stovetop method- Simply coat the almonds as directed and line them on a baking tray (without spraying in oil) to toast, stirring halfway through- Oh and at 325 degrees!

Healthy Sugar Free Caramelized Almonds

Just ten minutes are needed to make these smoky, flavorful sugar free caramelised almonds made over stovetop! By using a paleo friendly natural sugar substitute, these sugar free almonds are also vegan and gluten-free- The perfect snack to enjoy anytime!

Ingredients

  • 2 containers Blue Diamond Smokehouse Almonds approximately 1 1/2 cups
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla essence
  • 1/4 cup + 1 T granulated monk fruit sweetener can use coconut palm sugar or a stevia baking blend
  • 2 tablespoon water

Instructions

  • Heat a large frying pan or deep pot on medium heat. When hot, add the monk fruit sweetener, cinnamon and water and mix until fully combined. Allow to heat up, stirring occasionally.
  • When the sweetener has completely melted, add the almonds and mix until fully incorporated. Watch over the pan and continue stirring often until most of the sugar has been coated and beginning to crystallise. Continue stirring until they begin to start loosing moisture.
  • Remove pan from the heat and allow to sit for 1-2 minutes. Stir several times before transferring to a baking tray to cool completely.

Notes

To make clusters, increase granulated monk fruit by an extra 2 tablespoons and increase water by an extra tablespoon. Once removed from heat, allow to sit for 10 minutes before breaking up into clusters.
Almonds can be stored in an airtight container and are freezer friendly!

    1. I actually do know about American football, I just don’t care. 🙂

      You already know I’m a fan of the nuts. In fact, I made a batch of my own yesterday and then I caught Oscar on the counter, having a go at them too.

    2. I liked the easy way this pulled together and the addition of the cinnamon was awesome. I did use a combination of the mixed nuts I roasted myself and used the cluster recipe. Wasn’t sure when to add the vanilla so dropped it in right before adding the nuts.
