Delicious, healthy no bake dark chocolate raspberry cookies which take less than 10 minutes to whip up! They are vegan, gluten free, refined sugar free, have a protein packed and paleo option- A quick and easy snack to have on hand!
Line a large plate with baking paper and set aside.
In a large mixing bowl, combine the flour, cocoa powder, sweetener of choice, protein powder and mix well.
Stir through the nut butter (or sunbutter) and jam and mix through dry mixture until very crumbly. Add the dried raspberries and chocolate chips and mix well.
Using a tablespoon, add the unsweetened almond milk until a very thick dough is formed. Using your hands, form into palm sized cookie shapes and press firmly on the plate.
Refrigerate for at least 10 minutes or consume immediately for a more soft cookie.
Notes
* Adjust to taste. My protein powder was sweetened so I used half the amount ** If you don't use protein powder, ensure you use at least 1/4 cup of sweetener *** Adjust liquid accordingly.
