3 Ingredient Low Carb Keto Peanut Butter Cookies (Paleo, Vegan)
An easy recipe for no bake low carb keto peanut butter cookies using 3 ingredients and ready in 5 minutes! Low carb and refined sugar free, this healthy no bake cookie is soft, chewy and packed with peanut butter- Peanut free option included! Paleo, Vegan, Dairy Free.
In a small mixing bowl, combine your peanut butter with sticky sweetener of choice and mix well. If too stiff, melt in a microwave or stovetop.
Add your coconut flour and mix very well. If the batter is too thin, add more coconut flour. If the batter is too thick, add some liquid (water, milk etc) to form into a thick dough.
Roll the cookie dough into a ball and place on a lined plate. Press into a cookie shape, top with optional chocolate chips and refrigerate until firm.

* For a keto-friendly sticky sweetener, I used a monk fruit sweetened maple syrup.
