A single serving no bake breakfast recipe which has the flavours of a banana smoothie without the need to whip out the blender! Easy, quick and the perfectly balanced meal- Gluten free, high protein and very low in sugar!
In a medium mixing bowl, add the oat bran, coconut flour and protein powder and mix well.
Add the yogurt, banana and almond butter and mix very well until fully incorporated. Depending on the protein powder you use and coconut flour, mixture could be extremely think- If so, slowly add the unsweetened almond milk until a batter is formed which is easy to pick up using your hands. Stir through the chocolate chunks/chips and form into bite sized balls.
Consume immediately or refrigerate for 30 minutes to firm up.
Notes
If you don't use protein powder, sub for an extra 2 T of oat bran of 1 T of coconut flour. Also add a granulated sweetener of choice.
