Blend the cottage cheese with the taco seasoning in a food processor or blender until smooth.
Add the mixture to a microwave safe bowl, add the shredded cheese and microwave in 30-second increments until the cheese melts.
Serve warm with tortilla chips, veggies, or drizzle over nachos.

TO STORE: Store the leftover queso in an airtight container in the refrigerator for 3-4 days. TO FREEZE: Transfer the dip to a freezer-safe container and freeze for 3 months. Let the dip thaw overnight in the refrigerator. TO REHEAT: Microwave the dip in 30-second increments or warm it in a saucepan over medium-low heat.Variations
Spice. For a spicy dip, add a few dashes of your favorite hot sauce or minced pickled jalapeños.
Add some texture. Fold in chopped tomatoes or red onion.
Protein. For a heartier dip, add cooked ground beef or shredded chicken.
