In a high-speed blender or food processor, add your medjool dates and blend until thick and pulverized.
Add the rest of your ingredients and blend until fully combined. Scrap down the sides to ensure the mixture is fully combined.
Transfer to a large bowl. Using your hands, make 24 small balls. Place the balls on a lined plate and refrigerate until firm.

Apple Cinnamon Energy Bites can keep at room temperature, in a sealed container or shallow container. They can be kept in the fridge for up to 4 weeks or frozen for up to 6 months.
