No Bake Apple Cinnamon Energy Bites

Apple cinnamon energy bites are made with dried apples, oatmeal and loaded with cinnamon flavor! Packed with protein and made without added sugar, these energy bites are the perfect energy-boosting snack! Gluten-free and vegan.

Ingredients

For the paleo version

  • 1/2 cup coconut flour
  • pinch sea salt
  • 1 tsp Saigon cinnamon
  • 1-2 T coconut palm sugar
  • 2 T molasses can sub for any liquid sweetener such as agave, honey or brown rice syrup
  • 1 small apple chopped (keep skin on)
  • 1 T - 1/2 cup+ dairy free milk of choice*

Instructions

  • In a high-speed blender or food processor, add your medjool dates and blend until thick and pulverized.
  • Add the rest of your ingredients and blend until fully combined. Scrap down the sides to ensure the mixture is fully combined.
  • Transfer to a large bowl. Using your hands, make 24 small balls. Place the balls on a lined plate and refrigerate until firm.

Notes

Apple Cinnamon Energy Bites can keep at room temperature, in a sealed container or shallow container. They can be kept in the fridge for up to 4 weeks or frozen for up to 6 months.
