Healthy No Bake White Chocolate Macadamia Nut Cookies- Inspired by Subway's infamous cookies, these healthy white chocolate macadamia nut cookies are fudgy, chewy and require no baking at all! 1 bowl and 10 minutes is all you'll need to whip these beauties up which are paleo, vegan, gluten free, dairy free AND come with a high protein option!
1/4cupgranulated sweetener of choiceI used coconut palm sugar
2scoops of vanilla protein powderoptional
pinchsea salt
pinchcinnamon
1/4cupmacadamia nut butterCan sub for cashew or almond
1/2cup+ dairy free milk of choice**
1/4teaspoonvanilla extract
1/4cuphomemade dairy free white chocolate chips
2tablespoonmacadamia nuts
Instructions
Line a large plate with baking paper and set aside.
In a large mixing bowl, combine the sifted coconut flour with the granulated sweetener, protein powder (if using it), sea salt, cinnamon and mix well.
Stir through the nut butter of choice- The mixture should be very crumbly.
Add 1/2 cup of dairy free milk and mix well. Mixture should still be crumbly. Using a tablespoon at a time, add more dairy free milk until a thick batter is formed.
Stir through the white chocolate chips and macadamia nuts then using your hands, form into small bite sized balls and press firmly onto the lined plate and press to a cookie shape.
Freeze for 10 minutes or refrigerate for 30 minutes until firm.
Notes
* For non paleo, you can sub for a full cup of gluten free oat flour, oat bran or rolled oats however liquids need to be adjusted considerably- You'll need close to 1/2 cup tops (depending on if you use protein powder or not). ** Coconut flour brands differ. Depending on that, and also if you use protein powder or not, you may need significantly more dairy free milk. Cookies can be left at room temperature but will be soft and fudge like. For firmer cookies, keep refrigerated.
