Just ten minutes are needed to make these smoky, flavorful sugar free caramelised almonds made over stovetop! By using a paleo friendly natural sugar substitute, these sugar free almonds are also vegan and gluten-free- The perfect snack to enjoy anytime!
2containers Blue Diamond Smokehouse Almondsapproximately 1 1/2 cups
1/2teaspooncinnamon
1/2teaspoonvanilla essence
1/4cup+ 1 T granulated monk fruit sweetenercan use coconut palm sugar or a stevia baking blend
2tablespoonwater
Instructions
Heat a large frying pan or deep pot on medium heat. When hot, add the monk fruit sweetener, cinnamon and water and mix until fully combined. Allow to heat up, stirring occasionally.
When the sweetener has completely melted, add the almonds and mix until fully incorporated. Watch over the pan and continue stirring often until most of the sugar has been coated and beginning to crystallise. Continue stirring until they begin to start loosing moisture.
Remove pan from the heat and allow to sit for 1-2 minutes. Stir several times before transferring to a baking tray to cool completely.
Notes
To make clusters, increase granulated monk fruit by an extra 2 tablespoons and increase water by an extra tablespoon. Once removed from heat, allow to sit for 10 minutes before breaking up into clusters. Almonds can be stored in an airtight container and are freezer friendly!
