One recipe. Three ways. This Healthy No Bake Salted Vanilla Slice requires just THREE ingredients to whip up and depending on which method you choose, can be vegan, gluten free and refined sugar free! If all else fails, try the fool proof version!

For the cheat's version
125gramssaltedsquare crackers of choice (Salada's, Premium, etc)
380gramtin of caramel fill toppingor pre made caramel sauce of choice
1x 375 gram block of white cooking chocolate
sea salt to cover
The 'Healthy' Version"Vegan, Gluten Free
125gramscrispbread crackers of choiceI've used Ogran essential Fiber Crispbread
Line a large baking tray or cookie sheet with 1 layer of tin foil and 1 layer of baking paper. Cover evenly with the plain crackers and set aside.
Stir the caramel top and fill sauce evenly over the crackers and allow to firm slightly.
In the microwave or over the stove, melt the white chocolate until velvety and liquid like. Stir through the vanilla essence and pour to cover the caramel and cracker base.
Refrigerate for at least one hour or until firm. Once firm, break apart into pieces.
For the Healthy Version
Layer a large baking tray or cookie sheet with 1 layer of tin foil and 1 layer of baking paper. Cover evenly with the plain crackers at set aside.
Make the caramel sauce by heating a saucepan with the water and sugar until it begins to boil. Ensure you stir the mixture constantly. Add the sea salt and coconut oil (or butter) and continue stirring on medium heat until it thickens and remove from the heat.
Pour the caramel sauce over the crackers until they are all evenly covered and set aside.
Prepare your homemade white chocolate (see link above). Once caramel is generally quite set, pour the white chocolate over it and sprinkle with sea salt and freeze for 20 minutes, before transferring to the refrigerator to firm completely. Break up into pieces.
* The longer you simmer the homemade caramel, the thicker it is. In my original salted caramel slice, I allowed it to simmer much longer to become quite dark and rich looking. For this recipe, I wanted a more 'chewy' caramel so removed it from the heat earlier and thus, a lighter colour. I've tried several vegan homemade white chocolate recipes and the best one is the Huffington Post recipe- It firms the best and has a more vanilla taste.Adapted from No Bake Salted Caramel Slice
