Delicious, healthy no bake thin mint treats which take less than 10 minutes to whip up! They are vegan, gluten free, refined sugar free, have a protein packed and paleo option- A quick and easy snack to have on hand which taste like a thin mint!
In a large mixing bowl, combine the oat flour, cocoa powder, granulated sweetener of choice and protein powder, if using it.
Add the peppermint extract and mix very well. Using a tablespoon, add the dairy free milk of choice until a thick batter is formed.
Using your hands, form cookie shapes with the batter and place on a lined plate and freeze for 30 minutes.
Melt the extra dark chocolate and allow it to cool very slightly. Coat each frozen cookie in the melted chocolate and line on a lined baking tray or plate. Refrigerate until chocolate is firm
Notes
* For a paleo version, sub for coconut flour (first choice) or almond flour (second choice) *** Adjust accordingly. Depending on what combination of flour you use/protein powder etc- You will most likely need more. When I used coconut flour, I used close to a full cup.
