The taste and texture of a classic chocolate cake batter in a delicious, no-bake bite form! These soft, doughy and chewy healthy bites taste like dessert but are packed full of nutrients! Ready in just five minutes, this recipe is also gluten-free, vegan, grain-free and completely paleo- It also has a tested sugar free option!
In a large mixing bowl, combine your flours, protein powder, cocoa powder, salt and granulated sweetener and set aside.
In a microwave safe bowl or stovetop, melt your nut butter with the maple syrup. Mix very well until fully incorporated.
If batter is too thick (it generally is), add a tablespoon of dairy-free milk, until a thick batter is formed. If batter is too thin, add a dash more flour until a thick batter is formed. Stir in optional chocolate chips then using your hands, form into bite sized balls.
Refrigerate for at least 10 minutes, or until firm.
Notes
* For a paleo option, swap for 1 cup of coconut flour ** Adjust accordingly- I omitted because my protein powder was sweet enough *** To keep this sugar free, omit and increase dairy free milk- You'll have a more firm no bake bite **** Depending on the flour blend, you may need more. Adjust accordingly.
