These healthy no bake vanilla cinnamon roll cookies are the perfect guilt-free cookie, perfect for Christmas, holidays, parties and even cookie exchanges- They are also packed with protein so could totally be a pre or post workout snack! Made with no butter, oil, flour or granulated sugar, these no bake cinnamon roll cookies are naturally gluten free, vegan, dairy free, paleo, grain free and dairy free!
Line a large plate or tray with parchment paper and set aside.
In a mixing bowl, add your dry ingredients, mix well, and set aside.
In a microwave safe bowl or stovetop, melt your nut butter with your brown rice syrup until combined. Whisk in your vanilla extract and pour into the dry mixture.
Mix very well until a crumbly texture remains. Using a tablespoon, add milk of choice slowly until a thick batter remains. Slightly wet your hands and form small balls and press into a cookie shape on the parchment paper. Use a fork and cross each cookie before refrigerating or freezing to start the firming process.
While the cookies are firming up, start making your glazes. Once the cookies are slightly firm, add the first layer of the glaze- The protein one. Ensure it is more liquid than thick, and drizzle over all the cookies. Once done, add your coconut butter drizzle over the top and refrigerate again to set.
Notes
* Depending on the flour/protein powder you use, you'll most likely need more. You can omit one of the frostings- If you do, I'd recommend keeping the coconut butter one. Cookies need to be kept refrigerated, but can also be frozen. Ensure they are thawed slightly before consuming.
