This healthy blueberry muffin parfait takes just five minutes to whip up and is the perfect breakfast or healthy dessert/snack choice! A single-serve fluffy blueberry muffin layered between coconut yogurt, it's a gluten-free, vegan, grain free, paleo, refined sugar free and dairy free delight!

1/2cupdairy free yogurt of choiceI used a coconut yogurt blend
Fresh blueberriesto garnish
Prep your blueberry muffin in either the microwave or oven.
Once cooked, divide blueberry muffin in half. Mix half the muffin with 1/4 cup of the yogurt of choice and set aside.
Start layering your parfait with 1/4 cup of yogurt, followed by the mixed yogurt/muffin mixture. Top with remaining half of muffin, crumbled. Top with extra blueberries and a dollop of yogurt and enjoy!
* If dietary restrictions aren't an issue, you can use any blueberry muffin you have on hand. Parfait can be prepped in advance but enjoyed within 24 hours.
