Ingredients
2poundsbaby potatoeshalved
2tablespoonsolive oil
1teaspoonItalian seasoning
1/2teaspoonsalt
1/2teaspoonpepper
Instructions
Preheat the air fryer to 200C/400F.
In a large bowl, add the baby potatoes and olive oil and mix until fully coated. Add the Italian seasoning, salt, and pepper and mix.
Place a single layer of potatoes into the air fryer basket and air fry for 15 minutes, shaking halfway through.
Repeat the process until all the potatoes are cooked.

TO STORE: Let the potatoes cool completely, then store them in an airtight container in the fridge for 4-5 days. TO FREEZE: Place the potatoes in a freezer-ready container and freeze for 3 months. TO REHEAT: Reheat leftovers in the microwave, air fryer, or preheated oven until warm.
