Marinate the chicken in the mixture of olive oil, lemon juice, zest, garlic, oregano, salt, and pepper in the fridge for 5 minutes or up to 24 hours.
Preheat the grill to medium-high heat and brush the grates with oil. Once hot, Grill for 3-4 minutes per side, or until the chicken reaches an internal temperature of 160°F.
Remove the chicken from the grill and let it rest for 5 minutes before slicing. After resting, the chicken's internal temperature will rise to 165°F.

TO STORE: Store cooled leftovers in an airtight container in the fridge for 3-4 days. TO FREEZE: Let the chicken breasts cool, then transfer them to an airtight container or freezer-safe bag and freeze for up to six months. Thaw in the fridge before reheating. TO REHEAT: Reheat the chicken in a baking dish in a 350F oven until warm, or microwave the chicken in 30-second intervals.
