Marinate the chicken in the mixture of olive oil, lemon juice, and zest, garlic, oregano, salt, and pepper in the fridge for at least 10 minutes or overnight.
Preheat the grill to medium-high heat and brush the grates with oil. Once hot, Grill for 3-4 minutes per side, until fully cooked.
Remove the chicken from the grill and let it rest for 5 minutes before slicing.

TO STORE: Store cooled leftovers in an airtight container in the fridge for 3-4 days. TO FREEZE: Let the chicken breasts cool, then transfer them to an airtight container or freezer-safe bag and freeze for up to six months. Thaw in the fridge before reheating. TO REHEAT: Reheat the chicken in a baking dish in a 350F oven until warm, or microwave the chicken in 30-second intervals.
