In a high-speed blender or food processor, add your dried apricots and shredded coconut and blend until a dough is formed.
Using your hands, either form into balls or press into a loaf pan and press into place.
Slice the apricot delight into pieces and roll them around in sugar.

TO STORE. Keep these bites in an airtight container or bag. You can store them at room temperature or in the fridge for up to 2 weeks. TO FREEZE. These apricot treats freeze beautifully. Freeze them in an airtight container for up to 2 months. Put sheets of parchment paper in between the layers to prevent the bites from sticking to each other. Let them soften at room temperature before serving.
