  • In a high-speed blender or food processor, add your dried apricots and shredded coconut and blend until a dough is formed.
  • Using your hands, either form into balls or press into a loaf pan and press into place. 
  • Either roll the balls/bites in shredded coconut or the granulated sweetener of choice and refrigerate for 30 minutes to firm up.  

Notes

No Bake Apricot Coconut Bites can be kept at room temperature- Keep in a sealed container. They are fridge and freezer friendly too.
