My family loves these no bake apricot delight bites. They need just 3 ingredients and are sweet, tart, and so delicious. Watch the video below to see how I make it in my kitchen!
In a high-speed blender or food processor, add your dried apricots and shredded coconut and blend until a dough is formed.
Using your hands, either form into balls or press into a loaf pan and press into place.
Slice the apricot delight into pieces and roll them around in sugar.

TO STORE: Keep the bites in an airtight container and store at room temperature for up to 2 weeks or in the fridge for 1 month. TO FREEZE: Wrap the bars in plastic wrap, place them in a freezer-safe container, and freeze for up to 6 months. Let them thaw overnight.
