These paleo almond butter energy balls are dates, almond butter and raw almonds blended together, then formed into soft and chewy bite-sized balls. The ultimate whole30, gluten-free, and vegan snack!

Instructions

  • In a high-speed blender or food processor, add all your ingredients and blend well, until fully incorporated and a thick dough remains. Ensure you regularly scrape down the sides.
  • Transfer the almond butter energy ball batter into a large mixing bowl. Line a large plate with parchment paper.
  • Lightly wet your hands and form 20 small balls with the dough, and place on the lined plate. Refrigerate until firm.

Notes

Paleo No Bake Almond Butter Energy Balls should be stored in the fridge, in a sealed container or completely covered. They will keep this way for up to 2 months.
Almond butter balls are freezer friendly and keep well frozen for up to 6 months.
