In a mixing bowl, add your almond flour and maple syrup and mix until combined. If the dough is too thick, add a little extra syrup. If it is too thin, add more almond flour.
Using your hands, shape the mixture into a smooth ball of dough. Cover it in plastic wrap and place it in the refrigerator for an hour.
Preheat the oven to 180C/350F. Line a large baking sheet with parchment paper and set aside.
Remove the dough from the refrigerator and place it between two sheets of parchment paper. Using a rolling pin, roll out the dough until it is half an inch in thickness.
Remove the top sheet of parchment paper and use a cookie cutter to cut shapes out. Place the cookies on the lined baking sheet.
Bake the cookies for 10-12 minutes, or until the cookies begin to brown around the edges.
Remove the cookies from the oven and let them cool completely, before adding your icing, if desired.

Royal icing: 2 large egg whites (or 60 grams of pasteurized egg whites), 2 ½ to 3 cups powdered sugar (confectioners’ sugar), and optionally ½ teaspoon vanilla extract.Beat frothy egg whites, gradually add sifted powdered sugar while beating on low until stiff peaks form (about 5-7 mins), optionally adding vanilla extract, then adjust consistency with water or powdered sugar, and use immediately or cover to prevent drying.TO STORE: Leftover Valentine's day cookies should be stored in an airtight container and room temperature for up to one week.
