Peel the potatoes then dice them into 1/2-inch cubes.
Add the potatoes to a large mixing bowl. Drizzle with olive oil, add the Italian seasoning, smoked paprika, salt, and pepper, and mix well.
Add a single layer to the air fryer basket and at 200C/400F for 15 minutes, shaking a couple of times throughout.

TO STORE: Leftover breakfast potatoes can be stored in an airtight container in the refrigerator for up to 3-4 days. TO FREEZE: Let the potatoes cool completely, then transfer them to a freezer-safe container and freeze them for up to three months. REHEATING: Reheat leftovers in an air fryer, preheated oven, or microwave until warm.
