Using a mandoline slicer or a sharp knife, cut the potatoes into thin slices.
Place the potato slices in a large bowl and cover with ice water. Soak for 5 minutes.
Drain the potatoes and place them on paper towels and pat dry.
Grease the air fryer basket with cooking spray and place a single layer of sliced potatoes on top. Spritz with more oil, add some salt, and air fry for 15 minutes, flipping halfway through.
