My family cannot resist this chicken Caprese recipe. It features juicy, seasoned, cheesy chicken breasts simmered in the most incredible balsamic reduction. Watch the video below to see how I make it in my kitchen!
Season the chicken with salt, pepper, and Italian seasoning.
Heat oil over medium-high heat in a cooking pan and cook the chicken until golden. Transfer to a plate and set aside.
Add the balsamic vinegar to the pan, along with the sugar and garlic, and cook for 1-2 minutes. Add tomatoes and cook them for 5 minutes then add the basil and cook for another minute.
Return the chicken to the pan and top it with mozzarella slices. Cover the pan with a lid and cook until the cheese melts over the chicken.
Spoon some of the sauce over the chicken and serve with some fresh basil leaves.

TO STORE: Store leftovers in an airtight container in the fridge for 3-4 days. TO FREEZE: Let the chicken cool completely, place it in a freezer-safe container, and freeze for 3 months. TO REHEAT: Reheat the chicken in the oven at 325F for 10-12 minutes or in the microwave for 1-2 minutes or until warm.
