Slice the peeled ginger into small cubes. Juice the orange and lime and set aside.
Place the ginger, orange juice, lime juice, and pineapple in a blender and blend until smooth.
Strain the juice through a fine mesh strainer and add coconut water to the strained mixture, discarding the pulp.
Serve fresh or refrigerate for up to 3 days.

TO STORE. Keep the strained juice in an airtight container or pitcher and refrigerate for up to 3 days. TO FREEZE. Pour the ginger shot juice into ice cube trays and freeze until solid. Transfer the frozen cubes to a ziplock bag and freeze for up to 1 month. Let as many cubes as you need thaw in the fridge overnight, then drink the next day!Recipe variations
