In a mixing bowl, add your almond flour and maple syrup and mix until combined. If the dough is too thick, add a little extra syrup. If it is too thin, add more almond flour.
Using your hands, shape the mixture into a smooth ball of dough. Cover it in plastic wrap and place it in the refrigerator for an hour.
Preheat the oven to 180C/350F. Line a large baking sheet with parchment paper and set aside.
Remove the dough from the refrigerator and place it between two sheets of parchment paper. Using a rolling pin, roll out the dough until it is half an inch in thickness.
Remove the top sheet of parchment paper and use a cookie cutter to cut shapes out. Place the cookies on the lined baking sheet.
Bake the cookies for 10-12 minutes, or until the cookies begin to brown around the edges.
Remove the cookies from the oven and let them cool completely, before adding your icing, if desired.
TO STORE: Leftover Valentine's day cookies should be stored in an airtight container and room temperature for up to one week. If you'd like them to keep longer, store them in the refrigerator.TO FREEZE: Place the cookies in a ziplock bag and store them in the freezer for up to 6 months.
