Ingredients
1smallrotisserie chickenskin removed and chopped * See notes
2/3cupmayonnaise
1/3cupGreek yogurt
1tablespoonlemon juice
1teaspoonDijon mustard
1teaspoongarlic powder
1/2teaspoonsalt
1/2teaspoonlemon pepper
1/4teaspoonblack pepper
1/2cupceleryfinely diced
1/3cupred onionfinely chopped
1scalliondiced
Instructions
In a large bowl, combine the mayonnaise, Greek yogurt, lemon juice, Dijon mustard, garlic powder, salt, lemon pepper, and black pepper.
Add the chopped rotisserie chicken, celery, onion, and scallion and mix until combined.
If desired, chill the salad for 30 minutes before serving.

* Approximately two cups. TO STORE: Transfer the leftover chicken salad to an airtight container and store it in the refrigerator for up to 5 days.MAKE AHEAD: If you want to make this salad ahead of time, I recommend prepping it a maximum of 24 hours before serving.
