Preheat the air fryer to 200C/400F. Grease the air fryer basket. Pat dry the potatoes and slice them into equal-sized wedges, about 8 wedges per potato.
In a large bowl, add the olive oil, salt, pepper, garlic powder, and smoked paprika. Add the potato wedges and mix until all the potatoes are seasoned.
Add a single layer of potato wedges into the air fryer basket and air fry for 20 minutes, shaking halfway through. The wedges should be deeply golden and crisp around the edges.

TO STORE: Leftover potato wedges can be stored in the refrigerator, covered in an airtight container, for up to three days. They'll soften slightly in the fridge but crisp back up well when reheated.TO REHEAT: I highly recommend reheating the wedges in the air fryer, as they turn crispy again and taste freshly made. About 4 minutes at 400°F is usually perfect.TO FREEZE: Once the wedges have cooled, place them in a ziplock bag and store them in the freezer for up to two months. Thaw in the fridge overnight before reheating.
