Add the rolled oats, carrot, sugar, ground flaxseed, cinnamon, nutmeg, vanilla extract, protein powder, yogurt, and milk in a high-speed blender and blend until desired consistency.
Pour into a tall glass and top with shredded coconut and enjoy!
